A treat... cheese

I had to visit sometimes neighbors today - their camp is up the road from my house. The wife is partipating in a fiber art show I am part of organizing. I haven’t seen them in quite a while between Covid and busy life. Anyhow I was invited to stay while they cut into one of her homemade cheeses - a lovely cow’s milk manchego. We sampled with melon, crackers, tomato, salami and a glass of wine.

More importantly Linda, what are you going to do with all that vile Buddig ham when Chabby decides she prefers prosciutto? We get downright snobby in WI about "processed cheese food." Not being a WI native, I first learned to think about cheese when I was in HS and the French foreign exchange student we were hosting was teaching me to make crepes and asked for cheese. All my mom usually bought was Velveeta and Kraft singles. The look on his face as he tried to discern what the heck Velveeta was was priceless. That started me on a quest to understand his thinking, and I've never looked back to processed cheese foods. (I am dumbfounded by gas station sandwich cheese that melts under refrigeration.) I'll go off on a tangent on the assumption that people over here might care: I successfully made my first batch of mozzarella cheese at home last night! Bolstered by an earlier success with creme fraiche, my friend and I decided to try our hand at it. It turned out a little firmer and saltier than I prefer, but I know how to fix that in the next batch. When I came home from work, I got in the mail and noticed that this month's Fine Cooking has a recipe for making Feta cheese. I called my friend to mention it and she laughed maniacally and asked when I'm free next. Now we just need to decide what kind of milk to use, and whether we should follow the recipe in the magazine, or in the awesome cheese-making cookbook I bought. Bwa-ha-ha!

That smell is usually due to excessive sebum production, often secondary to allergic and/or bacterial/fungal (including yeast) skin disease (pyoderma). But the primary problem is usually allergies, which are not simply controlled, though shampoos can help some. Agree with a dermatology visit, as that will cut to the chase the fastest, and you will avoid a lot of unnecessary treatments that may not work.

Your comment made me curious, juellie, so I googled it. What a joke, I don't believe real cheese has any (of this "key ingredient") at all. If you buy Borden's American slices, that's not real cheese either because of added ingredients. It's cheese product, or cheese food, or something else. Try English cheddar, you may like it. It has a better taste than its American counterparts. Funny enough, it's usually white, the orange color you find in American products is simply food coloring. Most of us over the age of 65 have never had to worry about what we served when entertaining except for shellfish - perhaps a severe peanut allergy but I only know one man with this. He simply never eats anything prepared in anyone's home as he knows they probably have used peanuts or peanut butter in their mixing bowls/skillets. I usually just dealt with the shellfish by never serving it unless I absolutely knew my friends ate it. But when we were younger and had and went to lots of dinner parties, no one was on any "special diet" - no gluten-free (not sure anyone had even heard of gluten outside a home ec class!), no paleo, no Mediterranean, no vegans or vegetarian. When I was married 40 years ago, my matron of honor did not eat red meat at the rehearsal dinner, but she found plenty of other things on her plate and did not go hungry. I think she was the first person I knew who didn't eat red meat. If one has never learned to cook for such diets, it's pretty hard to learn, especially when entertaining. I never serve a recipe I have not prepared multiple times before. At my age, just preparing a meal for others is not easy and trying to figure out what is "allowed" is frankly just more than I am up to doing. I wonder how we all survived all those dinner parties in the past. Have people's bodies really changed that much? I don't remember anyone ever becoming ill and we all knew one another pretty wells.

That rind is beautiful! One of my favorite cheeses; lucky you! The other food looks like a wonderful complement, as well. Pretty setting for all of it.

I rotated this photo, but I still can't see what kind of wine you had:

I do see what looks like Serrano jamón on the other side of the tomatoes, however. Is that what it is? The cheese looks fantastic, and Manchego is also one of my favorites.

Sorry I completely missed the family interest in or general taste for wine. I don’t know what it was.

Also for whatever reason gardenweb does funny things to photos from my phone. I usually attempt to rotate and resave photos to no avail.

The cheese was delicious. I brought home a small piece which will go with a local cantelope I have tomorrow.

She must be quite skilled and have access to quite a lot of milk. Do they keep a cow or a herd of milk goats?

Re getting milk, for a fiber show there are bound to be lots of goats and sheep involved. :)

The cheese looks FABULOUS!!! I love manchego w/ anything fig.

This lady pursues her interests with great discipline and intellectual curiousity. She also makes sausages and prosciutto. She does not have sheep or cows. Or pigs. But there are a fair number of farms around who produce high quality meats and milk.

As far as fiber - her medium is quilting. So no wool... or sheep milk.

Have you tried rotating your phone before you take the photos? That might help, but I do not have Houzz on my phone, and so I'm not familiar with that. I use ImageReady to rotate my photos.

Lars - the issue only occurs with this site so I don’t always remember. And if I rotate and resave the photos they will still show up sideways. I find Gardenweb more and more wonky to use.

I’ve taken more of an interest in cheese lately and would have loved that invite!

As for pictures on fhis site, good luck. Rotating may or may not help, and even when I get the orientation right the images are more often than not strangely distorted unless you click into them. I generally give up.
