Chinese Almond Cookies...Colorado style

This is actually the second batch. We used the thumbprint process and jammed an almond into the cookie for the first batch. Didn't work so well. This batch was done with crushed almonds added to the batter. Yum!

Ingredients:

2 sticks of butter or, in our case, 170 grams of cannabutter

1-1/2 cups of granulated sugar

1 egg

1 tablespoon of almond extract

4 cups all purpose flour - packed

2 teaspoons baking powder

1/2 cup crushed almonds

whole milk as needed

Process:

Cream the butter and sugar. Add the egg, almond extract, and crushed almonds. Mix until creamy. Combine the flour and baking powder and then mix with above. You might have to add some whole milk to get it all to combine if using cannabutter.

Roll into one inch balls and flatten onto parchment paper covered baking sheets.

Bake at 350 degrees for 15 minutes or until the bottoms start to brown. Yields 48 cookies.
