Removing Tomato Seeds from Crushed?

I will be getting 20 pounds of tomatoes this weekend for my farmers market canning share.

I was going to can crushed tomatoes using one of the approved recipes (National Home Canning).

Question: Is safety impacted if I remove the gel sacks and seeds? I was going to make sauce but my strainer won't arrive until next week. So I was going to switch the plan.

As I understand the question, no , safety is not impacted by the gel sacks and seeds being removed.

Do you just want to can these tomatoes?

If you have the tomatoes proper , not crushed already:.

1st you need to remove the skins. Do this by heating up some boiling water and submerge the tomatoes in it for 2-3 minutes and then submerge the tomatoes in a bucket of cold water. Then the skins should slip right off and then you can cut out the core and dice the tomatoes to your liking.Then heat up the cut tomatoes in a pot or pan whatever you got., while you're washing up your jars and lids.

Then load up your jars to around 1/2 to 1 inch headspace. and tighten on the lids.

Add about a tablespoon of lemon juice or citric acid to each jar before loading in the tomatoes.

Process in a boiling water bath for 45 minutes .

Removing the gel sacks should be safe. Keep in mind though that removing them will also be removing some of the liquid content, so you might have to add water to compensate for that. The tomatoes should still be a bit sloshy as you pack up the jars.

Are you planning on removing the skins too I hope?

Hey Rgvnewf: I know what you mean. I am trying to combat the same problem as yourself. First off, go to the tomato forum. LOTS of knowledgeable people with great advice. Last year I had my tomatoes under growlights (2 tubes) in my cool basment. The lights were about 1/2" from the tops. I got leggy maters. This year I have them in a sunny window in a box with 3 sides lined with foil to reflect as much light as possible. I still have the light on them, and they are basically touching the tomatoes.The lights are on for about 18hrs a day. As long as they are well watered, they won't burn. Right now they are about 4-5" high. Reducing the light is a bad idea. The problem is not too much light but the opposite. The intensity of your lights are not enough so the seedlings are stretching out to try to get more light. Next year I plan on rigging up 4 lights angled inwards slightly with a reflective box to increase my light intensity. I don't have the funds to buy a proper grow light setup. Although not as stocky as I'd like, they are thicker than last year. I will be removing the cotyledon leaves and planting deep as mentioned by others here, but then I need more room to accommodate the bigger pots. WHich is why I tried getting them as stocky as possible. Another thing I tried was "supercropping". Crushing the outside of the stem (phloem) results in the tomatoes thickening the walls of the stem. It did seem to work although I didn't have the heart to do it to all my seedlings. They look so pathetic afterwards (droopy). Check out the tomato forum and do a search on "supercropping" for more info. This is a bit off topic, but I hope you won't mind another suggestion. I have had great luck with WOW (walls of water). If you did use them you could plant out sooner and the WOWs would protect the seedlings from that wind you have while they're young. Hope my experience in this area helps you out!

Berrybusy inspired me to try baking. Draining off the *water* has saved me time but I haven't been satisfied with the flavor of the resulting sauce. I had about fourteen quarts of tomatoes sitting around and I have just about canned my limit of sauce for the year. I halved the tomatoes and dropped them in a twenty quart pot with a little red wine on the bottom of the pot to get them started. After they heated up I removed the skins with a pair of tongs. Then into two large stainless baking pans and into the oven at 250 F for a few hours. I set the oven to 185 F overnight. In the morning the sauce was thick and very tasty. My wife said it was the best sauce she has ever tasted. The texture was better than my canned sauce as it didn't go through a strainer. I didn't notice any flavor from the seeds. I saved some for eating and the rest went into the freezer. Surprisingly the baking pans were easy to clean. I'll definately try this again. Zeuspaul

The use the calcium (Pickle Crisp) in some commercial canned tomatoes to help hold the texture. Speaking of Pickle Crisp (not to go off topic too much), the BULK type calcium chloride says to make a 1/2% SOLUTION, add a teaspooon to a quart of water, which isn't the same amount as adding it to a quart of vinegar based pickle brine. I need to actually WEIGH the 1 1/2 teaspoons of Pickle Crisp POWDER, and see if it will WEIGH the same as 1 teaspoon (or more?) of the BULK calcium chloride, which is 'pelletized'.... More on this later after I do more research... And , yes, I do have a very sensitive scale to weigh down to less than 1 tenth of a gram... I need to satisfy my own curiosity...!

Since this is my first time canning tomatoes, I think I will leave the seeds in. I think I need to know what the filled jar should look like before I start removing seeds and then adding liquid.

for water bath canning.Don't add water. That will dilute the acidity of the tomatoes.Then less safe for water bath canning.

Robert - if your first jar doesn't look like the pictures, don't give up! My first few times I under-estimated how many tomatoes I could fit in a jar. After processing, the solids will float and you'll see clear water at the bottom. It shouldn't be much, but in some of my batches it was 1/2 the jar or more! There are ways to use this product (like thinning sauces), so don't throw it out.

Maybe your first try will be right on point, though. Best of luck!

Thank you for the info Liz. I switched and did Annie's Salsa. But I will be back to this soon! And you are right, the liquid would be good! I read on here of someone who freezes the cobs after cutting the corn off, and putting a few pieces in a stock.
