I've given zucchini to the neighbors, I've fed zucchini to the cows, today I'm dehydrating zucchini chips with sriracha and garlic for snacks for Elery:

I made chocolate zucchini muffins (Mother has already eaten TWO)

Zucchini pickles and relish are already in the pantry, canned, and those big zucchini above are destined for zucchini candy, Bud says he will help if I'll make some.

I've sauteed zucchini with some of my fresh garlic:

And still I have zucchini, it's liking our 90+ heat and sunshine, I guess. I've got a recipe for zucchini gratin and zucchini "noodles" with a peanut sauce that I'm going to try.

Anyone else trying to just use up zucchini?

A little jealous. My early zucchini died after producing one fruit. Hoping the late zuke will make it.

Garrison Keillor said in "Lake Wobegone Days" that in zucchini season people made sure to lock their cars with the windows rolled up for fear that they'd come back and find someone had filled up their back seat with zucchinis :-D

LOL Colleen - Did you know that August 8th is "National sneak some zucchini onto your neighbors porch day"? True story!! I jumped the gun and celebrated the day last weekend when I left some yellow squash on my neighbors deck early in the morning. They actually thanked me for it!!

Annie - I think you need to shred and freeze some to make more of those muffins for your mom in the winter since she likes them so much. They look yummy!

I have a recipe for a mock apple dessert that's made with zucchini and it is really pretty good. Most people can't believe it's zucchini. lmk if you want it.

I learned a long time ago to just grow 1 hill (one or two plants) of Black Beauty Zucchini. I always have plenty to eat or give to my mom, but I'm never overloaded. :)

I have one huge baseball bat sized zucc. I would welcome recipes.

My daughter does make those chocolate zucc muffins which are delicious, but other than muffins and a sauté with zucc, garlic, onions and parm cheese I'm out of ideas.

I shred zucchini, a good way to use the huge ones, and make zucchini cake with Philadelphia Cream Cheese icing or Carl Goh's zucchini bread from James Beard's recipes.

Annie, those muffins look absolutely sinful! I'd have eaten a couple or so right off the bat, too!! :-)

Stuffed Zucchini

Slice in half lengthwise, scoop out the innards leaving about 1/2" thick shell. Sometimes I make a sausage/cornbread stuffing, sometimes I make more of an Italian style stuffing or the same kind of stuffing I use for bell peppers ( kind of Tex/Mex.) I always chop the rest of the zucchini up and add to the mix. Put in a baking dish with a bit of water in the bottom, cover with foil and bake at 350° for a half hour or so just until the stuffing is good and hot. Uncover, generously sprinkle some kind of cheese on top and stick back into oven until cheese is melty. I like Colby or Cheddar with the sausage, Mozzerella & Parm with the Italian and plain Jack cheese with the Tex/Mex but if you like more spice, Pepper Jack would probably be good.

We planted yellow zucchini; just went and looked at the plants. All male blossoms still. By the time they start letting girls into the party the squash bugs will be here :-/

Sarah, I have five plants, and they are happy where they are, I guess. I do have unlimited amounts of cow manure which I use for mulch, so I credit my soil and not my "green thumb".

Madonna, I wish you lived closer too, just because I think you'd be a great neighbor, we could have a lot fun together. The world may not be ready for it, though...

Jack, I've already got a stack of shredded zucchini packages in the freezer, right next to that stack of rhubarb, LOL. I have a muffin recipe that has orange and chocolate chips that I like, but Mother likes the chocolate ones best.

Edie, I already found squash bugs. I try to never use pesticides and spent this morning squashing potato bugs and looking for tomato hornworms, which get fed to the chickens. Squash bugs, though, I just pull out that roll of duct tape, I can wrap it around my hand and get a lot of them at once. I check the backs of the leaves for eggs and then I spray with dish soap mixed with water. Sometimes I can stay ahead of them, sometimes not. I can usually stop them long enough to get as many zucchini as I want, then I give up and pull the plants.

This morning Elery stuffed a zucchini with the leftover black bean and zucchini enchiladas and topped it with scrambled egg and a sprinkle of hot pepper powder from last year's dehydrated peppers. I told Mother not to look, LOL, she doesn't hesitate to look at Elery and say "yuck".

Last season I shredded and froze some in oil sprayed cupcake tins to use in my blueberry bran muffins, but they came out too juicy.

I think this time I'll salt and drain some to freeze for soups etc, but I'm also going to make up the fritter recipe I have and bag them in the snack sized bags I bought by accident. I'll just do a few to start and try them after a week or so in the freezer to see how it goes. My freezer is so full!

Luckily I have non-gardening neighbors who we're still getting to know, and an offer of fresh fruit and veges is a good way to say "hello!"

If the zuks get out of hand, there is a free box down the street at the community garden that we weren't able to get into, and anything we put in there is gone by afternoon (very walkable street!)

Annie.....5 PLANTS???????? HAHAHAHAHAHA! I couldn't even imagine! The 2 of us are overwhelmed with ONE plant!

Well, normally I wouldn't plant that many, but the B&B across the street was buying extra produce and they liked the very small zucchini to make "zoodles" for their guests. Now that they can't have guests, they have no need for the extra zucchini. (sigh) Our food pantries are not taking fresh produce at this point either.

My next excess will be eggs, I think. I bought those pullets because the B&B was buying 12 dozen a week. Now there are no guests and no catering. Eggs are easy to get rid of though, everyone wants to buy them since the stores are still limiting people to 2 dozen. I've gotten two little tiny "beginner" eggs, so in a couple of weeks we're going to have lots.

We ordered 10# of Michigan blueberries from a bulk food market we like. They arrived Wednesday. The neighbor gifted us with 3 English cucumbers, a large yellow squash and a large zucchini. So yesterday was spent freezing the blueberries on a cookie sheet, and making blueberry zucchini bread. It took me all day to freeze the berries DH had decided last summer to try making elderberry and pear wines. My cousin has tons of elderberries, and had a lot in their freezer in addition to what was fresh picked. A friend has a couple of pear trees that she gets lots from, and can't use them all, so we got to pick two 6 gallon buckets of pears. Those are all pealed and cut and frozen. So there is no room in my freezer for anything. I managed to find just enough room for one jelly roll pan to freeze the blueberries on! So I did one tray at a time. Even the door of the freezer is full! So I got 8 bags of blueberries, one bag in the fridge to eat, and a double batch of blueberry zucchini bread out of it all. And laundry done!

Annie, you may be right, the world may not be ready for the two of us being neighbors.

My chickens have not been laying in this heat, but I've been getting two to four duck eggs a day. Gave away a dozen last week to a couple who also are members of our volunteer fire department. I think I'm going to start freezing the excess for the winter, just in case.
