OK, it's that time of year, and my garden is finally paying off. We've got beans and bok choi, Napa and nasturtiums, cucumbers and collards. At the end of the garden alphabet we have the ever present zucchini. Yes indeed, we have zucchini. Lots and lots of zucchini. We have milk crates full of the big zucchini that got overlooked:
We also have two crisper drawers full of small zucchini and so far I've pickled zucchini, sliced and diced and cubed zucchini to cook with onions and garlic, made ratatouille, zucchini and black bean enchiladas, stuffed zucchini, oven roasted zucchini with parmesan.
