Oh Stacy, your photos are amazing. Wish I had a tortilla chip to dip in.

Even I think that your carrots are pretty.


Hadn't planned anything for dinner and didn't feel like stopping at the grocery store on the way home from work. Decided after I got home that pizza would be good. Had everything I needed on hand to make a Pepperoni and Mushroom pizza. Kneaded up some dough and had it rising by 6:00 and took the pizza out of the oven at 7:45.

    I will refrain from posting photos of our open-faced peanut butter and raisin sandwiches on sourdough bread.

    oooh, Ann, I want that crispy crust. now. for breakfast. I just dropped my buddy off at school - the 5th grade is headed to conservation camp until tomorrow afternoon! I was worried about him, as he doesn't leave me much - but here I am feeling pathetically lonely...:-( That pizza would definitely help, though.

    Eileen, I've never had peanut butter and raisin. sounds good!

    Yesterday, I slow roasted some tomatoes - only took a before photo, though. They went into the freezer.



    Last night, I poofed spanikopita meatballs with taczycki, fresh green beans and rice.



    Tonight, Scott has requested Mongolian Beef.

    To Ann t, the next time you make bread from pizza dough try the following. Just before placing in oven cover the top with thin slices of a good, hearty cheddar cheese and bake as usual. Delicious!

    Ann your pizza and bread look wonderful as usual. I'm sure you both enjoyed it.

    Stacy your tomatoes look wonderful. I love to do them that way. The meatballs are super looking too. I don't do meatballs enough in our house and need to change that.

    Last night we ended up going up the road to a new place that opened and had a wonderful meal. The place was packed but we ate outside since the weather was so nice. My husband got a sausage roll and I got a calzone. We shared an order of Greek Salad to go along side. The food was great and the prices were great. We will go back again.

    So that leaves me with the pork ribs from last night that I defrosted. Bone Suckin' Rib Rub will be put on and them and then some sauce later. Mashed potatoes and grilled vegetables to go along side.

    Dinner looks great! Stacy, I just copied a recipe from March Food & Wine for roasted tomatoes, yum! Ann I'm starving and that pizza looks amazing, as usual!
    Eileen, I really enjoy toasted cinnamon raisin toast spread with peanut butter! It's a favorite breakfast!

    Stacy, your photos are award winning.

    I had to go looking for the What's for Dinner thread. It was on the second page and not at the top either.

    Dinner Thursday night was bowtie pasta with prawns. Friday night was take out and tonight I grilled a couple of pork chops and made Sol's Zucchini Pancakes again to serve as a side. Mini ones topped with sour cream and chives.

    Yum! Everything looks delicious as usual. Gorgeous dinners Ann, and Stacy, those tomatoes look perfect.

    We had a very late lunch at TGI Fridays yesterday. We were desperate. Absolutely disgusting. I had one of the choices they tout as "healthy" and it was dripping in butter and way, way over spiced with spices that were clearly stale and flat. I'm not sure what I expected though.

    Friday night I had a chili failure. I want to like chili, but no one in my house is into it. I'm open to suggestions. Instead we had turkey noodle soup and fresh challah.

    School is stressing me out, I think I need a more non-traditional path to my goal, and I'm not sure the program I'm in is the right one for my needs. It's really frustrating and keeping me up at night. It's also somehow paralyzing me from getting anything done. I need to get over that.

    Havent posted to this thread in awhile but everything looks delish as usual!!

    Today I have to work so I picked out 2 lovely sirloin steaks for the boys...its an unusually warm day out so the plan was to grill them outside and make some sort of couscous but low and behold Amy decided to stop by last night and spent the night so now the plan is to slice the steaks thin and make a quick pepper steak stir fry...gotta stretch the protien LOL!!

    barnmom, I have gotten over the habit of having that artisan bread stuff mixed up in the fridge. That allowed me to have homemade bread with my limited ability to plan in advance. Thanks for reminding me to mix up a batch. :-)

    We just returned from NYC last night and I made sol's zucchini pancakes too! And Ellen, I topped with some of the tomatoes I roasted. They were heavenly. I said I couldn't find double cream brie - so I used regular. Not as melty as it could have been but I didn't care!

    Well, I'm not happy.
    I've been having server issues for the last 4 days, and most pictures refuse to download for me. I can see Ann's mouthwatering pizza, and Stacy's soon-to-be-roasted tomatoes, but nothing else. And I'm really eager to see Ann's mini zucchini pancakes, as well as Stacy's.

    I made more zucchini pancakes over the weekend, but there's no way I'll be able to post them until this issue with my Mafia server is resolved.

    Stacy, I've never heard of spanakopita meatballs but I'd sure like to get to know them better. A recipe please?

    Hi folks -- great looking food -- that pizza! Those meatballs! I too want the spanikopita meatball recipe please...

    Tonight was yummy -- pulled pork tacos with homemade salsa verde, along with corn on the cob and broccoli. I recently tried a recipe for salsa verde that a) involved roasting the tomatillos and jalapeno and b) included avocado. The addition of the avocado is really fantastic -- makes the salsa creamier and the flavor a little smoother and less harsh. So good!

    Poofed some chili a couple days ago and it is now thawed enough to nuke. No bread in the house and I ain't going to make any tonight. A big T-bone in the fridge waiting for me to get motivated... maybe tomorrow. Working everyday and starving myself so bad I gained 12 pounds in the last six weeks.... *oink*.

    We started out with Pesto Torta--this time, I added a bit of feta to it and loved the bit of tang that the feta provided. We spread it on crostini.

    Then, we had ravioli... I had "plain" EVOO with grated pecorino romano...

    but DH wanted a red sauce, so he had this with parmesano reggiano

    We had some roasted sweet peppers on the side, and some green peas, and a tossed green salad at the end (sorry, no photos of those).

    All in all, a yummy dinner!

    Oh Sooz, your dinner looks wonderful. I'd love a plate of your ravioli with or without sauce.

    We have been having some of the best weather we have had all summer. Hot days, warm evenings and then cooling off late in the evening making it perfect for sleeping.

    We had dinner on our neighbours, Clif and Barb's porch last night. Clif bought about 8 pounds of snow crab for me to cook. I made a large bastardized version of a Salad Nicoise to serve along side. Fresh steamed green beans, German fingerling potatoes, Heirloom tomatoes, yellow and red, artichoke hearts,hard boiled eggs, Kalamata olives, red onion and a creamy dressing seasoned with garlic and fresh tarragon from my garden.

    Lots of good food here and it's really making me feel like cooking up a storm. I'm heading out to the garage to defrost the freezer this afternoon. Maybe I'll find some real treasures....

    Sunday night we really didn't have dinner, just snacks and I tried a new appetizer recipe...

    Last night bagles with munster, fresh tomatoes, peppered bacon, just open faced along with Peaches and Cream corn, gotta enjoy these things while we can.

    Em, could you share that salsa verde recipe?

    Maureen and Nancy, here is the spanikopita meatball recipe. I made them a month or so ago and froze leftovers - they were very good. I liked them the best served in a pita with some of the sauce in there too. It's a Rachel Ray recipe.

    If I remember correctly, i turned the heat up high for a little bit to try to brown them a little more.

    Oh and I didn't use the grill seasoning - I'm sensitive to it.

    Spanikopita Chicken Meatballs with Spicy Cucumber and Yogurt Sauce
    Recipe courtesy Rachael Ray
    1 tablespoon extra-virgin olive oil, plus some for liberal drizzling
    1 small onion, finely chopped, divided
    4 cloves garlic, chopped, divided
    2 boxes frozen chopped spinach, defrosted.
    3/4 cup crumbled feta cheese
    1 pound ground chicken
    1 tablespoons grill seasoning (recommended: McCormick Montreal Seasoning)
    1 1/2 cups Greek style plain yogurt
    1/3 seedless cucumber, peeled and chopped
    3 tablespoons fresh dill
    1 1/2 teaspoons, 1/2 a palm full, cumin
    1 1/2 teaspoons, 1/2 a palm full, coriander
    Salt
    In a bowl combine onion and 3 cloves of garlic. Squeeze the water out of the spinach until completely dry. Separate the spinach as you add it to garlic and onion. Add feta, chicken and grill seasoning to the bowl and a liberal drizzle of extra-virgin olive oil. Mix the meat with veggies and feta and form 18 (1 1/2-inch) meatballs. Place the meatballs on a nonstick cookie sheet and bake 10 to 12 minutes until they are golden and juices run clear.
    Place yogurt, reserved and garlic, cucumber, dill, cumin, coriander and a little salt in food processor and process until smooth. Adjust seasonings and transfer to a serving bowl. Serve meatballs alongside sauce with toothpicks.

    So I was the guest at a dinner party. Running late I dined alone. A last minute invite? Perhaps to replace a missing guest or simply a last minute addition of a very gracious host. My host... an ethiopian thin lady of very dark complexion. Almost wonder if those were zuchini pancakes served to me as an appetizer. I ate like a pig at a mahogany table while standing up. Such a hurry as my host was to give a lecture. The servant gals encouraged me to hurry so I would not miss the talk. They were almost panicked as if missing might be rude yet so honestly polite. A wonderful main course of roasted venison.... very thick slices in a dark wine sauce. The called it a breaded fish entree as if it were some inside joke. One leaned to my ear and whispered the gals call it BFE with a giggle. Unwilling to let go of the delicious sourdoughish bread I set a piece on the table after buttering it. A young gal of maybe 10 who had been darting around the servant gals as they hurried about serving the guests elsewhere. The youngster, while very white seemed to be part of my host's family or at least her traveling group. She wanted to help me with my table manners after seeing the bread set on the table. She put a small coin the size of a dime next to the plate and was attempting to explain something about the order of the forks and the dime.

    Alas... I awoke and "dinner" was over. Where did I go?... and where did my mind come up with that? I've not been watching tv, movies, plays, or reading novels. No new medications and certainly no pain killers that give me weird vivid dreams like that.

    I want some more of that venison tenderloin! My host, such a kind lady, I wanted to hear her lecture as the gals had said they were delightful.

    Reheated curry, the-last-of-the-romaine-lettuce salad with bottled greek dressing, vanilla yogurt, a banana and some almonds.

    Tonight will probably be baked beans and a piece of cheese.

    I love looking at all the photos in this thread, the only problem is that it always makes me hungry! Unfortunately, I never remember to take pictures of our dinners, I'm too busy getting it all on the table and eating it!

    Last night for our anniversary dinner we had grilled chicken, twice baked potatoes and a simple garden salad followed by a key lime tartlette I picked up from the bakery that did our wedding cake. I couldn't see buying a whole cake or keeping an 8" diameter tier from the wedding for just the two of us, so a tartlette it was! The perfect light end to a great meal. The twice baked potatoes were quite a hit, my dh "informed" me that we'd be having the leftovers tonight for dinner! :)

    They're a little different than any others I've had at other people's homes, my mom and I started making them many years ago as a treat for dad. I guess I'll be making them more often now that my dh has given them the seal of approval. To make the potatoes, I cook small pieces of bacon, saute shrimp in a little of the bacon grease and cut into smaller pieces and mix those with the potato, cream, cheese, green onions, s&p and garlic. Then of course a little more cheese has to be melted on top for the proper experience!

    I think I need a pot of chili and cornbread as my Monday night dinners - eat when you can! Last night's stir fry didn't work!

    Tonight its more 'what can I make with all these tomatoes from the garden' so its beef stew. Sunday was orange roughy in tomato and saffron cream sauce.

    Wow... everything looks and sounds great! I've been reaching for convenience foods too much lately, so I was surprised that I made time to cook today. I cooked breakfast (just french toast and turkey bacon), AND dinner! And I worked today!

    Of course I shan't post pics... my camera is awful and my dishes embarrassing. Dinner was meatloaf, mashed potatoes, and peas. I used the meatloaf recipe out of the book that came with the mixer I'm trying out. It called for 20 saltine crackers (per 2 lbs of beef). I usually use bread crumbs when I wing it. Truth be told, I really couldn't tell a difference between the bread crumbs and crackers. It was pretty good, though I shaped it a little too flat. The mashed potatoes I did a little differently than normal. I left the skins on this time... too lazy to peel. They were good as well. I used canned peas for the first time in years and I really enjoyed them compared to frozen that I've been buying.

    I had an extremely conservative serving of Hagen Daas Mango Sorbet for dessert. 'Twas the best part of the meal!

    Tonight, had a meal of "Celebration Chicken" with green onion "stars" and steamed broccoli and rice. Not sure why it's called Celebration Chicken--maybe because ya celebrate when it first hits your taste buds?

    Whatever the reason, it was yummy!

    MB/Lyra, I found myself completely immersed in your dinner party. Hook, line and sinker.

    Which reminds me of a dream I had last night. No drugs were involved.
    As I was leaving my beach house, in Malibu, and heading towards my car, a Daddy Long Legs, the size of a Hyundai (Here's Y U Never Drive An Import), menacingly blocked my path. Out of the blue, appeared a huge vacuum cleaner, which proceeded to suck up the spider, setting me free. That's it. That was the entire dream.

    So, do you think Brain Fingerprinting was invented for people like me?

    Sooz, your dinner would be a call for celebration. And I especially love the Pesto Torta; I haven't had that in like forever ago.

    As mentioned earlier, I made more of these zucchini pancakes, this time stuffing them with crabmeat. I posted it on my blog, so if you guys want it, you'll know where to find it.

    I had some buttercream leftover (and a little time on my hands), so I decorated mini zucchini cupcakes. Yes I've had a lot of zucchini lately, mostly from our dear neighbors.

    Dinner was simple and homey. Chicken Cutlet with Country Gravy; cupcakes for dessert.



    Tonight's dinner is up in the air and I'm just too tired to jump up and catch it. That said, I am in the mood for semolina bread, so that's what I'll make this morning.

    lyra, Will and I would love to spend an evening chatting about dreams - we both tend to have some very vivid and bizarre ones, too...I'm still trying to decide whether to invite sol or not...LOL! Seriously, sol, a huge vacuum??? You know what they say about snake dreams...but spiders? I'm not sure.

    Bri, what's there not to like about those potatoes? mmmmmm!

    wow, Jessy - that's a busy night. Have you tried the slow cooker shredded beef tacos from opkikid? They're great.

    lpink, I'm going to miss picking up lettuce from the farm, so I just got a salad greens pack for my aerogarden...they should keep me going for a bit.

    oh Bobby, don't worry about pics not being perfect - that's obviously not what it's about! I'd love to have seen your mango sorbet - LOL!

    ok. no hiding it. you all know I'm blonde. Just how do you get the crabmeat inside the pancakes? If you use two pancakes, how do you seal the edges? I need details...the more the better...:-( Or do you pour more batter on top of the bottom pancake with crabmeat sitting on it? If so, how do you flip it without breaking it?

    sigh. maybe I better not try this - lol.

    Holy crab. There's something I forgot to add on the blog too.

    Stacy, just plop some batter onto the pan and quickly top it with some of the crab, cheese, or any filling you like. And then, top with an equal amount of pancake batter. Once the bottom of the pancake is set, you'll be able to flip it without breaking.

    Won't comment on all the great meals individually but suffice to say it's wonderful! The pictures are particularly inspiring. Think I will make my entire weeks dinner menu just from this thread alone!

    Hey Stacy --

    Below is the link to the salsa verde recipe I used -- note that while the recipe says two limes, the instructions only call for the juice of one, which is what I used. Also, I used a jalapeno instead of a serrano, and charred all things -- tomatillos, quartered onion, and serrano, on the grill before blending. The avocado really makes this for me though!

    Sol, what can I say. You just took your zucchini pancakes to another level. See Stacy, I told you that Sol's recipe was very versatile.

    Dinner last night was a quick dinner. Grilled New York Strips and homemade fries. Steak and Frites.

    I had an early appointment with the dentist in Victoria this morning before going to work. Had to leave the house before 7:00 AM. Ended up seeing two different specialists to try and figure out why a tooth that has a crown and a root canal is still causing me pain. Looks like I am going to have to have the root canal redone.

    On the way out of Victoria I stopped at my favourite little Mediterranean deli and picked up some Sheep's feta from Bulgaria. Made Moe a Warm Feta and Tomato salad for dinner.

    Last night we had hot chicken sandwiches with gravy. Tonight I poofed some pulled pork from a July pigroast. We will have quick sandwiches as it is meet the teacher night at school.

    OOOOOH Stacy, you know that is one of my favourite dinners.

    Thursday we were invited out to dinner to the Aerie Report and Spa. Dinner was amazing and the view from our window was spectacular. After dinner Chef Castro Boateng came out and chatted with us.

    Last night we had dinner with our neighbours. I made Parmesan Crusted Halibut and roasted potatoes, roasted tomatoes and broccoli.

    Oh, Ann,
    A number of years ago, my husband's firm (or should I say the firm he worked for!) had a meeting at The Aerie. We got to stay there for about 4 or 5 days, and it was pure heaven. It's also pretty darn heavenly in your part of the world. What a glorious place!

    Happygram, "pure heaven" does describe the location of the Aerie. Same could be said about the dinner too. It is only about a 10 or 15 minute drive from our home.

    Tried something new last night. Baked Stuffed Fresh Tomatoes. Moe loved it. Enough to eat three. Me? Unfortunately for him, I thought it was mediocre, didn't particularly care for it and won't be making it again. Thankfully, I made mashed potatoes to serve with it. So I was happy.

    All your meals look and sound delicious as usual! The last two weeks have been busy (and difficult) at work which meant I had to crash for a couple of hours when I got home. Dinner was catch-as-catch-can.

    Last night my boys and I met at Ristorante L'Italiano in High Point for my birthday dinner. The boys had shrimp two ways and I had Penne Siciliana with sausage, red bell peppers, kalamata olives, and onions in a tomato sauce but with spaghetti instead of penne. Leftovers will be lunch in a few minutes.

    Tonight I plan to make a baked chicken and rice dish for dinner and planned-overs.

    Can't wait to try the spanikopita meatball recipe, Stacy!

    Ann, that place does look special - I would have had to try the forbidden salad...just because it's forbidden - lol.

    The tomatoes look good, but your pizza photo at the top just "gets" me each time I come here!

    Last night we had chicken and dumplings - Will's request - as now he has the dreaded head cold. I am almost over it.

    Tonight, Scott wants me to bake a prepared pizza that he got at the supermarket...sigh. he drives me nuts. He can make that if he wants, I am making turkey burgers with brie.

    Hi all --

    I'm excited, as I finally tried out my new pizza stone (found it at a church rummage sale for $2.00!) and it worked like a charm! Made pizza with ricotta, roasted garlic, fresh herbs, tomatoes, shrimp and parmesan... VERY tasty, and finally a crust that actually had the right amount of crunch and chew! Yay!

    Stacy I have your (or Opkikids) crock pot beef for another Monday - actually I might try to pressure cook it instead...looks like a variation on my 'dump a container of salsa in the pot with a roast' quickie dinner. I have a quarter of left over roasted chicken in the fridge which will turn into tortilla soup for tomorrow's circus.

    Tonight DH is out shopping with his dad, so its bits and pieces for me and the kids - a steak and grilled red peppers for DS #2, salmon and sweet potatoes for me and DS #1. Carbs? What carbs? Gawd I hope he doesn't come home with a TV...
