Brussels sprout and squash casseroles question

I will be making a Brussels sprouts, pistachio, date mollasse casserole for the holidays.

i will also be making a butternut squash and apple casserole.

what do you think is the earliest I could make these two casseroles before serving.

i will be quite busy with other meal preparation for three days with visitors and would like to get somethings done beforehand.

Not sure the recipe though roasted, baked or saute... I've had both similar recipes on my holiday table for many years.

I prep...wash, trim, fresh, ready, with oil or recipe add-ons, garlic, etc, the day before. In zip'locks and cook, roast, saute, at the 3-4 hour point before dinner. Before the main protein needs the oven, or stove-top needs the room. They do not suffer needing maybe a 10 minute re-heat.

Day before cooking of brussels and/or most squash does not do well.

It can be a dance but prepped and ready is quick.

Do everything non-cooking ahead to relieve the pressure. I have set my table as early as the Sunday before Thursday thanksgiving..with the serving bowls on the table as well deciding what gets what. Seems nuts but when family starts descending...oy.

Only casseroles in my experience, can be half baked, then frozen. They still need oven time so I rarely do that. (I have stuffing/dressing I will re-heat/bake from frozen this holiday). Most veg like brussel sprouts, most squash not so good.

Being the onions are sprouting in one area only and lettuce pieces are starting to come to light, I'll average my temp is near 50 degrees. It's going to snow a few flakes tonight, so I'm putting a tarp over them, with 50 degree weather through out the following day. My yard stays green all year almost even rye grass never turned brown. I know it's not an evergreen, the clovers are still green, the hill I planted on is very high, maybe it gets more heat? I may have planted too deep, I'll wait for one more week, but next week I will replant if nothing else. The carrots should have peaked out, so maybe their is something wrong. It was so pretty outside, I thought I could get away with planting early. Root crops can grow all year round, so I'm not afraid for the turnips, carrots, and onions. I'll try to sprout them inside on paper towels or coffee filters next time, maybe do as the packets suggest by soaking them in water for 24 hours would have been better. I'll be watching for something until Thursday, then I'll start them in an inside garden on paper towels. Thanks for the input.

1. I don't know why your Brussels Sprout would shrivel while your broccoli plants were healthy. Usually such symptoms indicate cabbage root maggots or one of the root rots, but that affects broccoli as well. 2. Broccoli, especially the open pollinated cultivars, will head at different intervals. If the plants are large and healthy, you should be ok. 3. Only the cucurbits ( squash, cucumbers, melons, watermelons) need insect pollination. Most of the time there are enough insects, but with a limited number of plants, they don't always find the blossoms in time. Hand pollination is sometimes needed. All of these have separate male and female flowers on the same plant. There are cucumber and zucchini cultivars that produce without pollination. There are hybrids (seedless watermelons for example ) that require a pollenizer.

Linnea, here you go. Scalloped Chipotle Sweet Potatoes 1 or 2 canned chipotle peppers pureed with some of the adobo sauce 2 cups heavy cream 3 medium sweet potatoes, peeled and sliced thin Preheat the oven to 350 F. Puree the chipotles in a food processor until smooth. Stir in cream. In a large casserole dish arrange a fourth of the sweet potatoes and pour a fourth of the cream over all. Repeat with the remaining potatoes and cream, forming 4 layers. May be prepared up to this point one half hour ahead, covered, and refrigerated. Bake covered for 30 minutes, remove cover and continue baking for 30-45 minutes or until the cream has been absorbed and the potatoes are browned. ~variation of a Bobby Flay recipe

Any good dinner casserole or the like for leftover chicken?

I do like chicken pot pie, and AnnT's green enchiladas. We had a version of chicken ala king too, served over biscuits, but Grandma just called it "creamed chicken" and it contained whatever leftover vegetables we had, the leftover chicken, some stock and milk, flour to thicken if necessary. My girls loved anything that contained chicken and rice, so that made it easy to make fried rice with leftovers. I've also taken leftover chicken, pulled it apart, added BBQ sauce and made sandwiches, and the girls always liked ramen noodles, so I'd throw some chopped chicken in there for some protein and I've made chicken croquettes with leftover chicken as well. I've even put leftover chicken on pizza crust with other ingredients, whatever sounds good. Like Peppi, Elery and I are fans of legs and thighs instead of breasts, and because we raise our own chicken, there are always wings and breasts available. I just dumped a bag of wings into the roaster and made chicken stock, as I'm down to 4 quarts, and Amanda will always take the breast portions for chicken nuggets. Annie

Sleevendog, you are probably right about bruusel sprouts and squash no great as do ahead sides so I will take your advice and do all non cooking ahead of time.
