Make-ahead dressing in slow cooker

I'm planning on prepping dressing ingredients ahead of time, transporting 4 hours, and heating in a slow cooker because of oven constraints. Please critique my plan...

Recipe--about 50% cornbread/white bread (heavier on the cornbread), and 50% sausage, onion, celery, herbs, etc. topped with broth. My family doesn't like mushy dressing, so I lean toward less bread and more sausage. Don't worry--I haven't messed this part up in years.

I was going to crumble and dry the breads, and cook the sausage/onion/celery/herb concoction the day before. Put each in containers, and transport along with broth. Once at the destination, assemble all in a slow cooker to heat.

When I look up cornbread dressing in slow cooker recipes, there is often egg involved, and I've never added egg to dressing. The closest bread/sausage ratio (and this ratio is IMPORTANT to my family) I can find in a slow cooker recipe is this one. Would I just beat the eggs into the broth before pouring over? Could I leave out the egg? Whenever I make dressing in a regular pan in the oven, I do not use eggs. My family prefers a dry, crumbly, almost crusty dressing to douse with gravy, vs. a spongy dressing. Eggs would make it spongy, right?

editing... this will be a dressing served separately, not to be stuffed inside the bird.
