Salt-free turkey: Ew?
Comments (6)I don't think having a salt free turkey is a problem at all. My husband has been on a salt restricted diet for about four years now and I never salt our turkeys, roast chickens, or even rib roasts any longer. You just need to use other seasonings. I usually rub the turkeys and chicken with a salt-free spice blend. Lately I've been using Penzey's "Mural of Flavor." It's got a flavor profile similar to Bell's Seasoning. But you can use any herbs and spices that you wish. I rub the bird's skin and the cavities too. I usually season the cavities with a few allspice berries, some whole black peppercorns, garlic and onion chunks. I'll also throw a cut up lemon into the cavity. Lemon zest also adds a nice flavor to the turkey rub. Honestly, I think the turkeys and chickens I roast are just fine. The main things are to make sure that your rub is flavorful, that the skin is nicely browned, and that you don't overcook the bird and let it get dry. For flavorful turkey gravy, I roast the bird on a rack with some chunked celery, carrots, garlic, onions, and maybe a bay leaf or two underneath. I've served the turkeys & chickens to lots of people on regular diets and had no complaints and no asking for the salt shaker. I wrote about roasting chicken recently on my blog. Comments (6)Any meal can be made without salt except for baking cookies and cakes, etc that call for salt to be used. I rarely use salt in my cooking and chose to use herbs, spices and lemon. Don't use any prepackaged foods, canned soups or coating mixes and you should do okay. Put the salt shaker on the table for those that want to add salt to their food after cooking. Roast a chicken, stuff lemon and garlic in the cavity and baste with unsalted butter. Fresh berries with whipped cream for dessert. I am making shortbread cookies tonight using unsalted butter. Quick and easy to make. 1/2 cup corn starch 1/2 cup icing sugar 1 cup all purpose flour 3/4 cup unsalted butter softened Preheat Oven to 300F Baking time 15-20 minutes or until edges are lightly browned Sift together dry ingredients. Blend in butter until dough forms. Chill dough for approx. 30 minutes if too soft to work with. Roll dough into 1" balls and place 1 1/2" apart on cookie sheet. Flatten with floured fork. Comments (12)Yeah, no chance of getting him to go vegetarian or vegan -- though he does enjoy vegetables, he's not going to give up meat completely. I didn't want to get too personal but part of the issue here is that this young man has a number of developmental disabilities. This is not something he will easily embrace or that he can address for himself. His mom will prepare the evening meals and keep the house stocked but he is on his own for much of the day. He is fairly functional but not independent and not really capable of understanding the impact of diet. He's a creature of habit-- so that will help eventually but it's a hurdle to overcome now. It will be very easy to control his diet at home but much less so when he is out with non-family. It's just heartbreaking. This kid already has so many challenges in this life. It stinks that he has yet another. He isn't going to understand that, no, he can't just walk to subway for lunch as he's frequently done before.
