Piccata Chicken Salad?

After a lunch gathering today, one of the people asked me about making chicken salad that was more than basic. When I started pulling out the one sweet, one sharp, one spicy, one sour, one crunchy, one crisp, one soft, etc., the eyes went a little glazed over. So, I gave an example of chicken curry salad, which is popular here, and started thinking about recipes that would make a good chicken salad. Chicken piccata came to mind.


I'm thinking an emulsion of white wine (alcohol simmered off), lemon juice and EVOO, maybe with an egg yolk or dab of mayonnaise to help stabilize it. I think rinse the capers so they won't be impossibly salty, but still be careful with the quantity. Lightly toast minced garlic in butter. Poach chicken breasts and dice. Combine all the previous with chopped parsley. Grill sourdough or ciabatta in the garlic butter pan.


What do you think? Good or gross? Any improvements? It'll be a couple of days before I have a chance to try making this.
