Chicken skin (boiled) in chicken salad??

Mcmann and I had lunch today at a very nice restaurant, the same place we went last year. She had crepes filled with a chicken and ricotta mixture, topped with an onion-rhubarb glaze. I had a sandwich made with homemade bread and filled with chicken salad made with pistachios and grapes. I pulled three or four pieces of chicken skin out of it.

I never eat chicken skin, and I never expected to find it in chicken salad. Yet I doubt this was a mistake. So my question to you is: Have you ever heard of adding the skin to chicken salad?

It's a good restaurant--really! :-)
