Chicken skin (boiled) in chicken salad??

Mcmann and I had lunch today at a very nice restaurant, the same place we went last year. She had crepes filled with a chicken and ricotta mixture, topped with an onion-rhubarb glaze. I had a sandwich made with homemade bread and filled with chicken salad made with pistachios and grapes. I pulled three or four pieces of chicken skin out of it.

I never eat chicken skin, and I never expected to find it in chicken salad. Yet I doubt this was a mistake. So my question to you is: Have you ever heard of adding the skin to chicken salad?

It's a good restaurant--really! :-)

Ooh -ICK!! Flabby, flacid poached chicken skin?? NO! I'd have sent it back.

Now if they made the chicken salad with grilled chicken, that might be marginally acceptable. But still - no. ICKY

So I don't see how it was wrong for me to RME when I got the recipes with fruits and nuts. When we do a topic asking a specific question, should others reply for the sake of themselves, or to answer the OP's question? Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

This version is delecious, and not nealy as heavy of calories. Try making this fennel rub. I now use it for everything. Chicken Salad with Fennel Spice Recipe courtesy Michael Chiarello (a no Mayo chicken salad) Yield: 4 servings Boiled chicken: 1 chicken, about 3 1/2 pounds 3 tablespoons Fennel Spice Rub, recipe follows, plus 1 1/2 teaspoons 6 tablespoons extra-virgin olive oil, plus 6 tablespoons 1 large celery rib, halved 1 large carrot, halved 1 large yellow onion, quartered 2 bay leaves 1/4 cup thinly sliced celery heart 1/4 red onion, thinly sliced 2 to 3 teaspoons fresh lemon juice Sea salt, preferably gray, and freshly ground black pepper 1/4 cup thinly sliced fresh basil leaves Lay out the chicken, spreading out the parts as much as possible. Cover generously with 3 tablespoons of the fennel spice, rubbing it into the skin. Place a large pot over medium-high heat. When the pan is hot, add 6 tablespoons of the oil and heat to almost smoking. Add the chicken and brown on all sides, about 5 to 6 minutes per side. Add the celery, carrot, onion and bay leaves and sautÃ© for a few minutes. Add 4 cups of water to the pot, or enough to cover the chicken. Bring to a gentle simmer and cook just until the chicken is almost fully cooked, about 40 minutes. Turn off the heat and cover and let cool. When pan has cooled, place in the fridge overnight. Lift out the cooled chicken and strain the stock, discarding the solids. Refrigerate or freeze the chicken stock for another use. Remove the skin and bones from the chicken. Shred the meat by hand into rough bite-size pieces. In a large bowl, combine the shredded chicken, celery heart, red onion, 6 tablespoons olive oil, 2 tablespoons lemon juice, remaining 1 1/2 teaspoons Fennel Spice Rub, and salt and pepper, to taste. Add more oil, lemon juice, or Fennel Spice Rub, if desired. Add the basil and serve. Fennel Spice Rub: 1 cup fennel seeds 3 tablespoons coriander seeds 2 tablespoons white peppercorns 3 tablespoons kosher salt Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades. Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze. Yield: about 1 1/4 cups

Hmmmmmm. Sometimes these upscale places do not know the difference between oh, say, French peasant food and French cuisine developed and tested, by trusted experienced chefs, with the recipes carefully guarded, and handed down through generations. For instance, Italian royalty did not eat squid. Squid is what gets caught in the fishermen's nets and is cut out and tossed to the street urchins who did not have the money to buy fish and vegetables. I Googled *Chicken Skin Salad* and one came up from Daniel Boulud's ''Cafe Boulud Cookbook'' linked below. Yuck. I guess it is just a matter of what one is used to. I mean if someone tried to explain hot dogs to a visitor I'm sure the person would cringe. "Hot dogs! Why yes siree, they are a favorite of almost every American! You just take some pig intestines and rinse out the fecal matter, and then fill them with ground up snouts and tails, and liver and hearts and spinal cord and whatever else is laying around after a hog butchering. Sorry to have turned everyone's stomachs! I guess it did get there accidentally then.

Normally I would have sent it back. But last year when the two of us were there I sent my lunch (a salad) back because it was drowning in oil. Before I discovered the chicken skin, Mcmann and I were joking about being "the two women who show up once a year and complain about the food." So I decided to suck it up (and pick it out of my sandwich). :-)

The place has an excellent reputation. I'll tell my DIL about it, as she works there.

PLEASE tell me where you ate--since I don't live far away, I'd like to know to avoid ordering the chicken salad, if I ever eat there.

LOL.....the way this thread is going I think the entire KT might turn vegetarian.

I didn't know you were in the neighborhood (more or less), Azzalea. We ate in Hawley.....are you near there?

I didn't realize there was skin in your salad! We must have been so busy taking that you never mentioned it. But we did comment about how strong the coffee was and joked about sending that back. It was so strong that I had to add extra sweetener and lots of cream. Susan asked the waitress if the coffee was always that way and our server said "Oh yes!" as if they were famous for their heroically strong coffee. However my crepes were quite yummy.

We'll have to see what they do next year when we met for our annual summer luncheon.

Maybe next year we should go here.

I'm still laughing about "heroically strong coffee." I just emailed my DIL, who roasts and grinds her own coffee beans, and asked her what she thinks of their coffee.

OH My ...I'll tell ya...I just wouldn't be able to eat it after I found the first piece of skin...I like to roast my chicken with the skin on in the oven for making chicken salad but I take the skin off when I am preparing it...No fat, no skin and no gristle.

I love chicken salad...I make mine with craisens, walnuts, celery and mayo or even Miracle whip sometimes and it's fabulous...

I'm thinking they had someone new making it, or they decided to economize a bit, or buy it from a really poor QC supplier.

I probably wouldn't have noticed it though. With the various textures in chicken salad I probably wouldn't find it. Might have to start looking from now on though!

I have never found skin in any chicken salad sandwich I've had in a restaurant, but I have found bits of the gristle. Both are yuck!

No, I never add chicken skin to my chicken salad. Just green grapes, roasted almonds, and mayo.

OMG! I would never want to find THAT in my salad.

It HAD to be a mistake, and I would have sent it back.

Was it listed as an ingredient on the menu?

I've never heard of chicken skin in a salad!

Azzalea- You are safe from the boiled chicken skin restaurant. Susan and I were in Hawley, PA in the Poconos area. My husband and I are spending the week at our "country home" in the mountains of PA. Although I must confess there are several restaurants in our common stomping grounds in southern NJ that I won't return to.

Nope, never found any skin in the chicken salad at places we have eaten at. It must have been an over site on the prep cook's part. If the CS was good tasting I would just have put the skin to the side of the plate and ate the rest. No reason to send back good tasting food. NancyLouise

Ugh. No. I would have mentioned it to the waitress. They may have someone new working in the kitchen who did not understand the instructions. That happens sometimes.

I work in the restaurant industry. Believe me, one has to give every single detail when training and instructing kitchen staff. Often times the dishes being made are things that they never grew up eating, and even the fruits and veggies used, are things that they may have never ever seen before. Funny: A worker made a batch of strawberry glaze and neglected to pull off the little green leaves from the strawberries. True.

I know some people NEVER eat the chicken skin. I actually like it crispy on BBQ chicken but in a salad - No.

DH would like crispy skin in chicken salad (he loves chicken skin), but it would have to be eaten immediately or it would lose it's crisp. I can't imagine eating poached chicken skin under any circumstances. It's just gross.

No way would I have been so kind. That chicken salad would have been sent back warp speed !! I love chicken skin on fried chicken, but not from boiled or poached chicken. ICK !! I love poached chicken, but the pets get the skin. They love it.

Sounds pretty gross to me too..

As far as chicken salad...I really don't care for all the fruit in my chicken salad...I don't know how or when all that got started. I REALLY don't want any grapes in it...yuk.

I love fruit/chicken (and sometimes fruit/meat) combinations. When I'm feeling ambitious, I'll put grapes and apples and pineapple in chicken salad--not for a sandwich, but for a main dish salad.

No skin, however. :-)

I think I'd call the restaurant and ask if that is the normal way they prepare it. That way, you've let them know there's a problem if it's NOT normal and if it is, you could express your dismay about yesterday's lunch disappointment. And your curiousity will be satisfied!

I love chicken salad, grapes are OK with me, but not raisins in any fashion. I like chopped hardboiled egg in it, too.

I only eat tuna or egg salad. Chicken salad grosses me out so I will never have to deal with skin or no skin in my salad.;-)

Now I do eat Chinese chicken salad and they leave the skin on but it's crispy.
