No expert, but I think this is a recipe for botulism

Mother Earth News published this recipe in its most recent issue. The author of the article states that he adapted it from the Ball Complete Book of Home Preserving. "The original recipe uses white wine vinegar with apple juice or white wine. I used only water...."


Ingredients


2 1/2 c. unchopped basil leaves, firmly packed

4 C. water

1 3/4 oz fruit pectin

5 c. sugar

green food coloring (opt.)


Directions are standard for making jelly with a 10 minute processing time.


Isn't this an extremely dangerous recipe? Isn't the vinegar required to make it safe? I hope I'm wrong on this.
