How to make Thin White Bread

Since we do a lot of Frou-Frou tea sandwiches instead of meals, the price of a loaf of Pepperidge Farm thin sliced bread is ... um ... over priced. I love to bake bread but what I make is either a soft country bread, Seeded Rye, Brioche or Sourdough. None of which bodes well for the thin sliced needs of white Frou-Frou.

I've been using this recipe for white bread and then cutting it thin with a serrated knife when COMPLETELY cooled.

An old fashioned way of buttering thinly sliced bread which might be liable to tear, without making holes in it, is to butter the cut end of the loaf, and _then_ slice off a thin slice.

The yogurt shouldn't be a problem reacting with yeast. Yeast actually works best in a mildly acidic environment, which is why ascorbic acid is often mixed with dry yeast products. To improve the rise of breads containing wheat germ and whole wheat flour (which contains wheat germ), I always add an acid ingredient to counteract the gluten-damaging effects of glutathione in the wheat germ. Bacteria (in yogurt and also present in bread dough made without yogurt) produces those tasty acids in bread dough that improve the flavors of bread when we refrigerate it. The acidity already present in sourdough starters help sourdough breads keep longer, inhibit mold growth and also slows staling, and you'll see the same qualities in breads made with yogurt. -Grainlady

Dense and rubbery dough will he helped by allowing the dough to rise before baking. I gathered that the dough was a thick crust rather than a thin crust. The addition of a couple of tablespoons of oil will allow you to roll the dough thinner....as will substituting a couple of tablespoons of corn meal for an equal amount of flour. I read once that the cornmeal cuts the glutin strands that keep you from being able to roll the dough really thin. Don't know if that's so or not, but it works. Also try partially rolling out the dough then wrapping and chilling and then rolling while it's still cold. If you roll your dough very thin, you will have a thin crust pizza. Linda C

rhome410 - The soup is really good - never made the bread with pumpkin beer, but I think I am going to have to give it a try. The recipe is from Rachel Ray (the link is below). I have never used the chopped chives and depending on my mood, leave the curry out : Ingredients 2 tablespoon extra-virgin olive oil, 1 turn of the pan 1 medium onion, finely chopped 3 cups canned or packaged vegetable stock, found on soup aisle 1 can (14 1/2 ounces) diced tomatoes in juice 1 can (15 ounces) black beans, drained 2 cans (15 ounces) pumpkin puree (found often on the baking aisle) 1 cup heavy cream 1 tablespoon curry powder, 1 palm full 1 1/2 teaspoons ground cumin, 1/2 palm full 1/2 teaspoon cayenne pepper, eyeball it in the palm of your hand Coarse salt 20 blades fresh chives, chopped or snipped, for garnish Directions Heat a soup pot over medium heat. Add oil. When oil is hot, add onion. Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil. Reduce heat to medium low and stir in cream, curry, cumin, cayenne and salt, to taste. Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives. here's a very good recipe for zucchini bread. I made 6 large muffins and 1 small loaf pan with this recipe. Ingredients 3 cups grated fresh zucchini about 4 zucchini 3 cups all-purpose flour 2 teaspoons baking soda 2 1/2 teaspoons ground cinnamon (I used china cassia) 1 1/2 cup granulated sugar 2 large eggs 2 teaspoons vanilla extract 1/4 teaspoon kosher salt 3/4 cup butter (melted 30 seconds in microwave) 1 cup chopped pecans optional (I use sunflower seeds) Preheat the oven to 350F. Grease two 8x4-inch loaf pans. nonstick spray works well. Set aside. Place the grated zucchini in colander in the sink while you continue. Mix sugar, eggs, vanilla, salt, and butter in a large bowl. Add flour, baking soda, and cinnamon, and whisk in until just combined. Stir in grated zucchini until just incorporated. Add nuts, if using, and stir in until just combined. Divide batter between prepared loaf pans. Bake for 40-60 minutes, or until a wooden toothpick inserted into the center comes out clean.*** (25 min in my convection oven) Cool in pans for 10 minutes. Sub milk for the water in your basic 4 ingredient bread and add a couple of T. sugar.....bake at 350.

I got this for slicing my homemade bread and it works really well.

I also learned that the best knife to use to slice bread is an electric knife

I like this recipe

Sandwich Loaf

1 ½ pound loaf

Ingredients

1-1/4 cups water

2 T butter

1 teaspoon salt

3 cups bread flour. 360 gm, or 12 ounces

1 t vital wheat gluten

2 tablespoons whole instant dry milk powder or buttermilk powder

2 tablespoons sugar

2 teaspoons Instant or Bread Machine Yeast

Warm water & butter in microwave – 30 - 60 seconds

Add liquid to bread machine bowl, and allow to cool a bit

Add dry ingredients to bread machine pan in the order suggested by manufacturer. (turn off preheat if your machine has such a setting)

Run dough cycle for 90 minutes

Remove, shape and place in 9 x 5” bread pan

Preheat oven 375°

Allow to rise until it’s about 1” above the top of the pan. About 30 minutes No more or it will mushroom. over the sides as it bakes

Bake at 375° for 15 minutes, then reduce the temp to 350° and bake for about 20 minutes.

Remove and brush top with melted butter

Cool, on it’s side, covered with a clean dish towel.
