Comments (8)I would beg to differ with athensmom regarding ranges. One of the most telling demonstrations of the difference between a professional chef and an amateur came when a friend of ours, a restaurant owner and head chef, cooked for us at his home. He make an incredible meal on a 30 year old gas range that must have put out maybe 5000 BTUs max. And topped that with a perfect souffle made in the oven which didn't even have a door that shut completely. Just because Bittman can cook on junk doesn't mean that I can. I need all the help I can get, and a great range is a big part of it. No matter how hard you try, you just can't really sear right on an electric coil stove. You can't really stir fry on a feeble 5K BTU gas hob. So BS and Culinarian ranges really DO cook "better" than builder grade dreck. And even Bittman, in the article about his kitchen, says what he dreams of is "A functioning oven, the best possible stove." So just because he cooks on a tiny low end gas stove doesn't mean he wouldn't agree that a great stove makes you a better cook. Now, I will agree, however, with athensmom, that when we're talking about bluestar vs wolf, that the differences are small, perhaps too small to really make a big difference in how well people cook. At that level, the differences are likely outweighed by other kitchen skills--I'd take a really sharp knife, a Unicorn pepper grinder, and All Clad pans any day over the extra 4K BTU's that a Blustar might put out over a Wolf. Comments (10)Or another alternative if you are dead set on installing a gas rangetop is a plug in portable induction unit. This would allow you to pull it out when making pasta or hosting parties. MIL has the 48 inch Wolf Rangetop with integrated griddle that runs on propane. I honestly prefer the cooking performance of my Bluestar I have the Electrolux Wave Touch ovens. Do I use half the buttons, no, but it's an amazing oven and I'm really happy with it fwiw. But, if you like the other Kitchen Aid appliances you may be able to purchase a suite and receive a discount. So, the KA oven may be better for you. These guys aren't joking on venting. I was shocked when remodeling to learn how much vents cost. There is a laundry forum, you may get more feedback on the whirlpool machines there. Comments (5)I have the Wolf DF. Google Wolf blue chipping. It is well documented on this site. There is one lawsuit over thus and maybe more to come. Wolf has redesigned the M series wall oven to supposedly address this but they have not on the DF range. I would recommend a separate range top and oven so that you can pick what is best for you for each component. With a range you are stuck with replacing the range if the oven goes. I have not seen any DFs that I am that taken with. I am waiting to see how the Miele is over time. I am also looking at BlueStar which is all gas, but I have an electric wall oven....See MoreDifference between a lower- or higher-end wall oven?
Comments (7)You sound like you could go with a BS range really. Electric ovens can be very different from each other. You are coordinating several elements and sometimes multiple fans. Some have variable fan speeds while some do not. You have the very complex like Miele and Gaggenau to something like Wolf to something cheaper but similar functioning like Electrolux or possibly Bosch on down to something with less modes and maybe just an on off switch. I have Electrolux and love it but it has the blue enamel and the only brand immune to the chipping seems to be Gagg. As for broilers, some gas ovens have infrared broilers that tend to be smaller but more heat than a traditional gas broiler. BS is like that. Electric broilers are much wider. I bake all kinds of things but we do have family members who are very strictly GF, actually wheat free, so bake quite a bit along those lines. My philosophy is using recipes that are naturally wheat free rather than a bunch of substitute ingredients.
