Smoked chicken, deviled eggs, beans. We plan on vegging out and watching the Olympics, so everything is done except the chicken.

Cheater meal tonight. Made a cucumber salad this morning to go with Trader Joe's Green Curry Simmer Sauce. I'll add sliced chicken breast and frozen peas (maybe julienned carrots too) to the sauce and serve over jasmine rice.

I cut up a chuck roast, browned it, simmered in beef stock/broth, onions for 3 hours. I'll make a gravy of it and serve over noodles. Also cooking baby carrots. 2 pounds baby carrots in pot, cover just to top of carrots, bring to boil and turn down to simmer, cover and simmer till just about tender 45 min or so...drain off half the remaining water add 1T butter and 1T brown sugar continue simmering until nicely tender..yum. Little potato rolls and applesauce. I will be glad once dinners over as I really don't feel good.

I wish I could contribute more but I will confess. Saturday nights are pizza and movie nights. Have been for years.

Fried thick slice of ham, with cheese, lettuce, tomato, pickle and onion,` put in a tortilla wrap and toasted on a cast iron skillet.

I'm sitting in the middle of a blizzard. We have 4" so far. It's 12F. Going to go get on the treadmill so I don't feel guilty eating T-bones & salad for dinner. :0)

Went to a play with some lady friends and then out to dinner. Chicken Francese and tossed salad for me.

Wild rice soup, again! I made a rice/chicken salad, too.......that's a lot of chicken, isn't it??? and rice??? Oh, well, that's the way it is when one cooks for only oneself!

I made Kung Pao Chicken with spring rolls.

Supper was served at the birthday party I had for my grandson. I made ox roast served on Kaiser rolls, baked macaroni and cheese and cupcakes. We also had cut up fruit and veggies.

Humming bird cake homemade has moved to my #1 favorite cake. I had never heard of it before my neighbor made some and brought us over a slice. She knows we are diabetics so she doesn't do it often and we are careful. She makes it spectacular. I will give her my ripe bananas when I have some. I should have given her some today. She is a wonderful baker. We are no longer neighbors next door but still in the same area and best friends. Today she brought us each a homemade cookie shaped like a heart as a house warming gift lol. And she gifted me a vintage, expensive, Betty Crocker cookbook. It was one both of us lost in the flood.

Our dinner was simple but delicious, one of our favorites. Vermicelli pasta topped with sauce consisting of garlic sauteed in butter and gently simmered diced fresh tomatoes. Sprinkled on top with feta cheese. An ice cream bar for dessert, maybe a slice of pie later.

Not sure yet, but im thinking we might go back to the restaurant across the street for their pastrami sandwiches. They make the pastrami in house using a big smoker that's near the outdoor patio and it is among the best pastrami I've ever had. The only thing that could beat it is the pastrami hubby made a few months ago.

All of your meals sound wonderful. I'd be more than happy to to be a dinner guest at any of your kitchen tables! I've never heard of hummingbird cake until Marilyn Sue mentioned it the other day - going to go Google it.

I'm still on a low residue diet for a couple more days in advance of my upcoming colonoscopy. Am not crazy about it and am trying to make it as appealing and healthy as possible.

I baked a couple of chops, made mashed hubbard squash, fried zucchini patties.

Three cheese stuffed pasta shells with daughters home canned marinara sauce, meatballs on the side, and a Caesar salad. Also daughters crusty garlic bread and seasoned olive oil for dipping. YUM, YUM

Did you mean 4 or 5 min? I usually cook mine 3 to 6 min total.

We ended up going to a Thai restaurant; the pastrami will have to wait for another day.

We had marinated grilled pork, stir fried asian kale with garlic, spicy mushroom salad, pad krapow (minced meat - chicken in our case and fried holy basil) and steamed rice.
