Speed / Combi Steam Oven Instead of Wall Oven?
Comments (13)I just linked to a picture I found online; however, my speed oven interior looks exactly like the picture. My cookies, not so sure..... Wall ovens, when they were introduced in the 1950s, were often really installed in a cutout in a wall. Nowadays they're almost always put in cabinets, but the term stuck. My Advantium 240 was installed in a new hole cut in the kitchen wall, reclaiming what previously was utterly unusable space above a staircase, which previously was open to its landing and 7 to 10 feet upwards, with sliding doors covering it. I reappropriated it for the kitchen in the adjacent room, as the bottom of that unreachable storage closet was only 50" above the kitchen floor. I would have preferred it a half foot lower, but free space in this tiny kitchen (which didn't have room for a dishwasher before renovation) was too good to pass up. As for how much I value the "regular" oven we're putting in, it too will have a drawer under it - and the oven itself is already under the counter. I got the smallest oven I could find - 24" wide, 24" tall - and it leaves room for a 6"h drawer underneath. Comments (8)First of, congratulations on your good deals for these three units. They will serve you well. For ventilation and wiring purpose, you will need a gap at the back of the shelf behind unit. For combi steam oven, this is where the oven sucks in the air in. It will vent warm air to the front underneath fascia. So following diagram #1 looks fine. For the sentence "The cabinet housing must not have a back panel fitted behind the installation niche", this must be from a newer manual of the combi steam oven. For example, see newer 6805 manual vs older 6805 manual. In a version that I have it uses "Make sure there is no back wall behind the building-in recess" which means that there should not be a cabinet back wall right at the cut out area. See picture for air intake in combi steam manual in installation section. In terms of installation each is 18" tall, just need to be arranged such that coffee machine is not too tall, and speed oven not too low. Perhaps somewhere where the bottom of the combi steam oven is a little bit below bench top level. A combi venting warm air at the front is not an issue for comfort. I have only combi steam oven in my kitchen and its bottom is at the bench top level which is very convenience, but that would put coffee machine a little too high up, if it is going to be on top. Comments (7)A combi oven is much broader in function than a steam oven. . I would look at Miele, plumbed version. It functions as a steam oven but also as a full on convection oven but with control of humidity. You can read some of the manuals online especially Gaggenau and it gives you an idea of how it can work and the levels if humidity for different cooking needs. http://resources.gaggenau.com/us/wp-content/uploads/BS-470-485-Use-and-Care.pdf For just reheating, a MW is quicker. It is sort of self steaming. Comments (5)If you are getting the Miele Speed Oven then it will work as a second oven. I have both the CSO and Speed along with a 30” wall oven. I mainly use my speed oven as an oven. It has a bottom and top heating element unlike conventional convection microwaves. It has all the oven modes as my CSO except for those needing steam. The CSO can only heat to 435 and the speed to 475. These ovens are more difficult to keep clean than a conventional 30” wall oven. There is no self clean mode and the Miele interior finish is not suppose to be used with oven cleaners like Easy Off. There are several threads about cleaning these ovens. I do not cook foods that produce alot of grease or splatter - those go in my wall oven or on the grill. I have had have my ovens for 7 years and they look not quite like new but almost - I have also not had to do a ”deep” clean on my CSO. I boil water and white vinegar to clean my speed oven. They are geat ovens but they do have their limitations....See Morekismetique
