Comments (5)I don't have Miele, but I have both a combi-steam oven (Gaggenau) and a speed oven (Advantium). I think the answer, for what you've described, is whether you think you can do without a microwave. There no reason why you couldn't heat a "watery" clear soup in the combi-steam--you could in any oven--but it would probably do best in a pot or wok on the stove. Theoretically, you could heat it in a strong bowl on the rewarm/regenerate setting in the combi-steam, but it's not the most logical way to go. It would probably take longer than on the stove, if you include preheating time. Perhaps you'd be able to store a little microwave along with your toaster and just put it out when you want to zap something? There isn't anything that you can make in a combi-steam that you can't make without one, but, especially if you're getting a plumbed model, I think you'd enjoy what you can do in a combi-steam....See MoreWall ovens, combi steam, microwave: Time to commit
Comments (16)After about a year of planning and deliberation, here's the final line up! Bluestar 48" rangetop w 24" griddle Bluestar French door, new electric wall oven Wolf M Series combi-steam Wolf Warming drawer Kitchen-Aid 30" convection microwave 36" SubZero built-in french door 24" SZ beverage center 15" SZ Ice maker 24" Bosch Benchmark DW 18" Bosch 800 Series DW How I decided on the Wolf combi-steam: I went to see both the Wolf and Miele units in person. I narrowed it down to those two based on Wolf's looks and Miele's plumbing. I knew that the Miele and Gagg were both plumbed but I didn't give enough weight to the fact that Miele doesn't have a drain. When I saw the Miele in person, I realized that emptying and cleaning the tray was really what I thought I was going to avoid by getting the plumbed unit but in fact that was not the case. The Wolf doesn't have a broiler, but I've got one stacked above it in the BlueStar and am not bothered at the thought of moving from one oven to the other. I also have the Searzall + Blowtorch, so I won't be at a loss for browned, melted goodness. The one thing I still long for is Miele's M touch operating system. The menus were so clear and thoughtfully designed. The Masterchef feature looked like a dream, for both an experienced cook like myself and for those who don't like to cook at all. Alas, I can't have it all. I'm sure I'll find my way with the Wolf. The microwave was decided purely by looks. I had planned on buying a unit from one of the main manufacturers (Sharp or Panasonic) but the Kitchen-Aid was the best looking, by far, with the rest of the new pro-style appliances and their handles. I also really loved the button panel across the bottom, the fact that it still has a number pad (as opposed to a dial or the other newfangled styles), and that it has a pull door, as opposed to a push button (one of my inexplicable pet peeves.) There's also a popcorn addict in the house and we're very intrigued by their popcorn popping technology. Something about how it recognizes when it's done the same way we would, when the pops slow down to 1-2 seconds apart. I have to tell you, it was so nice to write all of that without a tinge of doubt. Comments (7)A combi oven is much broader in function than a steam oven. . I would look at Miele, plumbed version. It functions as a steam oven but also as a full on convection oven but with control of humidity. You can read some of the manuals online especially Gaggenau and it gives you an idea of how it can work and the levels if humidity for different cooking needs. http://resources.gaggenau.com/us/wp-content/uploads/BS-470-485-Use-and-Care.pdf For just reheating, a MW is quicker. It is sort of self steaming. Comments (5)If you are getting the Miele Speed Oven then it will work as a second oven. I have both the CSO and Speed along with a 30” wall oven. I mainly use my speed oven as an oven. It has a bottom and top heating element unlike conventional convection microwaves. It has all the oven modes as my CSO except for those needing steam. The CSO can only heat to 435 and the speed to 475. These ovens are more difficult to keep clean than a conventional 30” wall oven. There is no self clean mode and the Miele interior finish is not suppose to be used with oven cleaners like Easy Off. There are several threads about cleaning these ovens. I do not cook foods that produce alot of grease or splatter - those go in my wall oven or on the grill. I have had have my ovens for 7 years and they look not quite like new but almost - I have also not had to do a ”deep” clean on my CSO. I boil water and white vinegar to clean my speed oven.
