Comments (5)I don't have Miele, but I have both a combi-steam oven (Gaggenau) and a speed oven (Advantium). I think the answer, for what you've described, is whether you think you can do without a microwave. There no reason why you couldn't heat a "watery" clear soup in the combi-steam--you could in any oven--but it would probably do best in a pot or wok on the stove. Theoretically, you could heat it in a strong bowl on the rewarm/regenerate setting in the combi-steam, but it's not the most logical way to go. It would probably take longer than on the stove, if you include preheating time. Perhaps you'd be able to store a little microwave along with your toaster and just put it out when you want to zap something? There isn't anything that you can make in a combi-steam that you can't make without one, but, especially if you're getting a plumbed model, I think you'd enjoy what you can do in a combi-steam....See MoreSteam oven or combi steam oven
Comments (8)Unless you are going to do just plain steaming a lot, go with stream combi oven. It can do what a stream oven can plus much more in combination mode. Your range will require water connection, so it is worth it to also get a plumbed combi steam oven. It is quite a lot more convenience not having to worry about filling in water and drainage. Combi cooking is what people are praising for its wide capability to do different things to your food. I cook Asian cuisine and use pure streaming mode all the time. A plumbed model makes it more convenience with a lot of streaming activity. I also use a combi mode a lot, both for actual cooking and reheating. In terms of cost, think of it this way. If you put in a pure steam only and rarely use it, and compared with a frequently used combi steam oven. Cost per usage over a lifetime will be easy cheaper for the combi. For majority of people who has a combi oven, it had become their go to oven due to various reasons: faster heat up time due to smaller cavity; reheating meals; or just for the actual usage of combi cooking. Pure steam oven may be a better choice if combi mode is not of your interest, and you will do a lot of steaming. Comments (11)I had the exact same dilemma as the OP. We opted to go with the speed oven over a regular microwave which is located under my combi steam. We also have the M touch wall oven with moisture plus. With the two of us - we use the speed oven quite frequently in conjunction with the combi steam as it heats quickly and has full oven capability. This allows us to avoid heating the large oven for just one dish. We have used the speed function a handful of times and it works well but speed cooking is not something we have a need for at this point in our lives. I can also use it as a "warming" drawer if needed. Comments (6)If you type “Combi Steam Speed no other oven” in the search box in Discussions/Appliances you will get many threads on this topic. The down side I would see is not all of your larger pans such as half sheet/cookie/large roasters/pizza stones/etc may fit in either oven. In the case of miele the speed and combi steam ovens max out at 435 degrees and the broiler is not as strong as a full size oven. It could also be an issue down the road for resell as the cabinets would need significant rework to incorporate a traditional 30” oven. That may or may not be an issue for you. The cleaning aspect is another consideration as self clean may not be an option. (I use self clean on my miele Convection oven - 5+ years and no problems). I was fortunate to be able to include a 30” wall/combi steam/speed (all Miele) in my kitchen. If I had a choice I would have nixed the speed and found a place to house an inexpensive microwave hidden either in a cabinet or my walk in pantry (I still have my old toaster oven there and use it occasionally).
