Buying Miele Range & Combi-Steam. Would you also buy a speed oven?

48" range or induction/steam combi/speed oven?
Comments (3)1) 36" Induction vs 36" Bluestar rangetop. The ventilation requirements are not that much different particularly if you want to wok on a regular basis. You will still want at least a 36" x 24" deep hood with at least 450 cfm. 600 cfm for the Bluestar. Differences is you will need a flat bottom induction compatible wok vs a traditional round bottom wok. Probably want the power burner in front or full surface induction. Some models may turn off when flipping/tossing food with wrist action on handle instead of utensil. Sometimes you want direct fire cooking. Like fire roasting peppers or marshmallows. 2) You will need a more expensive hood because the 48" cooktop has 8 burners or combo of burners plus grill/griddle/French top/salamander. You have to bend down for the oven but the oven is under the rangehood. Broiling salmon? It is properly vented under the range hood. 3) I have a 36" Capital Culinarian with rotisserie and self-clean oven underneath a 42" x 24" rangehood. Plus a Gaggenau 24" wall oven with an integrated Sharp microwave drawer underneath. Comments (1)1. If you search in the Appliances forum, you'll find a number of posts from one guy who has the Sharp, and sells them, and thinks they're terrific. 2. Lots have the Advantium (inc. me, but I have the Monogram Pro 240 version). Plenty of info about that, and the OTRs in the Appliance forum too. I love my Advantium. I'm not so enamored of speed cooking, but it's a truly excellent microwave, and works very well in oven mode. It works fine in speed mode as well, but I have yet to find things that I wouldn't rather spend the extra half hour on to do the old fashioned way. If I had X number of minutes to get the kids to practice, I'm sure the speed mode would be my best friend. 3. Yes, consensus is the Breville is the best toaster oven. More info about that in Appliances too. :) I have the Gaggenau combi-steam. The amount of steam escaping really isn't a big issue, though I suppose it might be if you had a uberairtight house, or high humidity. I'm not sure you need the toaster oven except for actually making toast, or a lot of family members all making different things at once. I have a conventional oven, combi-steam and Advantium, and keep a toaster oven in the small appliances drawer for toasting bagels, et al. When we take it out, we put it on the island, handy to the breakfast seating. I use one of the smaller ovens (both the Advantium and combi- do convection oven mode) if I need a small oven, never the toaster oven. Comments (45)I don't know the answer but I am curious. if I were you (and having the benefit of hindsight) I wouldn't hesitate to call any of the Miele USA "Experience Centers" and ask to talk to any of the design staff. If you are in the US start with the Princeton, NJ center, their US headquarters. Even better if you can get to a center. The staff at these centers are a world apart from anyone you'll encounter at any appliance dealer, they use the products for demos and classes and typically have the appliances in their own homes. And it's their job to know the details on what you are asking. And report back and let us know. Comments (2)(Cross-posted in other Miele Steam Oven threads) We bought a Miele DGC 6800 XL Combination Steam Oven (non-plumbed) and a few months later on a whim descaled the unit. Right after the descaling process, my Miele steam oven gives me a 'Fault 20' whenever I try to do steam cooking. The regular convection cooking works fine. I wish I had bought something else! It's out of warranty even though we probably used it about 20 times. Now Miele is asking for $150 for a technician to come out and pay an additional $90/hr for labor + $ for parts!...See MoreChanop
