Carrot Cake problems

DGS made my T&T pineapple carrot cake at Thanksgiving and it had a real strange texture - real oily, I had him use liquid coconut oil instead of Crisco Oil. I covered the cake with a double layer of paper towel and in the morning the towel was soaked with oil. ????


I know the correct amount of oil was used, so is there a difference in oil amounts when using liquid coconut oil versus the called for Crisco Oil?


The cake tasted fine after I soaked up the oil and put on the frosting, but don't really want that to happen again.
