Do You Grate or Chop Carrots For Carrot Cake?

My son always asks for carrot cake for his birthday, which is coming up soon. I have tried several recipes but always have problems with the cake 'sinking' in the middle. I am careful to measure carefully and always drain the carrots on paper towels for a little while before adding to the batter, but I always seem to have the same problem. (I should mention that he prefers a 'pure' carrot cake, so I don't use a recipe with pineapple, raisins, nuts, etc. Just carrots.)

The only thing thing that I can think of is that I chop the carrots very finely in the food processor instead of grating them. Could this make a difference? I guess I could try using the fine grater attachment instead, but I thought I would check with the good cooks here first. Would appreciate any suggestions. Thanks!
