Comments (13)Buzylizzy: Don't make yourself Crazy looking for the recipe. Basically they are all the same except for another Spoon or 2 of Sugar. Or replace the Sugar with Honey. I found that using the Wheat Flour and Folding in the beaten Egg Whites. Makes a big difference . That is if you like Lighter crispier Waffles. Pancakes it just makes them lighter. I just made another batch yesterday. I asked the guys on the road crew to come in for Coffee and Waffles. Now I have to make another batch. They're all gone. Comments (20)Lars, I often substitute water for milk in bread, mostly because I'm out of milk, I don't buy it as often because I only drink one glass for breakfast daily and it's always skim, Ashley likes chocolate milk, whcih might actually be OK in some breads but not most. I've also successfully substituted my homemade yogurt for sour cream and milk in bread and muffins without noticeable problems. If it were me, I'd just substitute water in most bread recipes. Comments (4)I have one just use the basic ingredients. It's a large recipe but I always half it, even cut it in 1/3 since we have a small family. Full recipe yields 10 - 12 servings: 3 C of full ripen sourdough starter (I used 166% hydration)- one cup of sourdough starter mixed with two cups of flour and two cups of water and let it sit out overnight 1 or 2 eggs 1 tsp salt 1 TBSP sugar 2 TBSP fat (any fat i.e. melted butter, oil) 1 tsp baking soda I usually use only one egg but when I use 1/3 of the recipe I just use egg white from a carton. With a fork, beat everything but baking soda together until well mixed. The reason I save the baking soda for last is that I love to see the interaction between the sourdough and baking soda. It's so exciting to watch the batch "grow" in front of your eyes. Cook on pre-heated griddle until most bubbles burst then flip over to finish cooking. Oil 2 heaping tablespoons of Vanilla Pinch of salt 1/2 cup Sugar 1 cup of Wheat Flour 4 teaspoons Baking Powder All Purpose flour --------------------------------------------------------------------- I beat the egg whites first , so I don�t have to clean the beaters. Beat the egg whites with a teaspoon of sugar, until peaked. After the batter is made Add 1/2 the egg whites to the batter and fold in easy. Beat the other 1/2 of the whites until very stiff and fold these in also. . - - - - - - - - - - - - - - - - - - Pancake Batter: Put the first 6 ingredients ( except egg whites ) in a mixing bowl and beat until smooth. Put in the Wheat flour, Baking powder. and some All Purpose flour. Beat until smooth. Add enough AP flour to thicken slightly, For Waffles: Thicken a little more, to where you have to move it around with a spoon, when it is put on the waffle iron . Then do the egg white thing as in the pancake batter. When baked I cool them fast on a rack and put them in a plastic bag, and right in the freezer. If you overcook a little, dampen slightly with water, before you put them in the toaster oven. As for the waffle iron , I have a very old round one with adjustable heat Range. It makes a waffle about 1/2 inch + thickness. For me this is just right, for the amount of butter and syrup that you can put on top. I found a Cuisinart mod.WMR-CA to match my old one. Now I can make Waffles in Stereo I don�t use the Belgium Waffle Maker ; except when I�m adding Ice cream and fruit topping , because it�s too much waffle for the amount of syrup and butter. But may be good for you.! If I want a Belgium Waffle, I just make a double decker and put fruit or whatever filling in between. With Ice cream on top.
