Pancakes and Waffles Recipe

2 ½ cups milk ( IÂve been using powdered milk)
2 eggs ( separated ) .
1/3 cup of veg. Oil
2 tablespoon of vanilla
Pinch of salt
½ cup Sugar

1 cup of Wheat Flour
4 teaspoons Baking Powder
All Purpose flour

Mix Pancake Batter
I beat the egg whites first , so I donÂt have to clean the beaters.

Beat the egg whites with a teaspoon of sugar, until peaked.
Add ½ the egg whites to the batter and fold in easy.
Beat the other ½ of the whites until very stiff and fold these in also.
After the pancakes are cooked, I put plastic in between for freezing.

Batter:
Put the first 6 ingredients ( except egg whites ) in a mixing bowl and beat until smooth.
Put in the Wheat flour, Baking pwd. and some All Purpose flour.
Beat until smooth. Add enough flour to thicken slightly,
(were it leaves ripples while mixing ) not thin and loose.

For Waffles:
Thicken a little more, to where you have to move it around with a spoon,
when it is put on the waffle iron . Then do the egg white thing as in the pancake batter.
When baked I cool them fast on a rack and put them in a plastic bag,
and right in the freezer.

If you overcook a little, dampen slightly with water,
before you put them in the toaster oven.

As for the waffle iron , I have a very old round one with adjustable heat Range.
It makes a waffle about ½ inch + thickness. For me this is just right,
for the amount of butter and syrup that you can put on top.

I found a Cuisinart mod.WMR-CA to match my old one.
Now I can make Waffles in Stereo

I donÂt use the Belgium Waffle Maker ; except when IÂm adding
Ice cream and fruit topping , because itÂs too much waffle for the
amount of syrup and butter. But may be good for you.!

If I want a Belgium Waffle, I just make a double decker and
put fruit or whatever filling in between.
With Ice cream on top.
Then you have more cooked surface area , on the Waffles.
Which is where the flavor is ( the cooked surface )

I took the recipe to a friends house and don't remeber where I put it when I got back!

Ever since I have had WW pancakes , I have never eaten anything else!

Here's my waffles recipe, which can also be used for pancakes. I don't separate the eggs, but the addition of cream helps make them lighter. You can replace the sugar with honey, but I don't like them overly sweet. I use 1/8 cup of WW flour with 1 cup or white flour, but you could use up to 1/2 cup WW flour with 5/8 cup white flour. When you increase the amount of WW flour, you may need to increase the amount of liquid.

busylizzy, this is the recipe I use for both pancakes and waffles. I seldom separate the eggs and beat the whites, but they do make a nice light waffle if I do that. I usually add blueberries and just make pancakes.

WHEAT WAFFLES

2 c. flour (1 c. white & 1 c. wheat)
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. honey or sugar
1 3/4 c. milk (2/3 c. non fat dry milk & 1 3/4 c. water)
4 tbsp. salad oil
2 eggs

Mix dry ingredients together, including nonfat dry milk. Stir in remaining ingredients. For lighter waffles, separate eggs. Beat egg whites an carefully fold in. Makes 8 waffles.

I haven't looked thru every paper in the house yet, lol.
Although I did find a 1910 edition of the The Histroy Of Canning and Recipes by Marion Harland.
Intresting read, how about? Apple Scallop, Beets Stuffed with Peas or a Peach Pie baked in a "good" oven, maybe Hot Beef Loaf with Bananas!

Don't make yourself Crazy looking for the recipe.
Basically they are all the same except for another Spoon or 2 of Sugar.
Or replace the Sugar with Honey.
I found that using the Wheat Flour and Folding in the
beaten Egg Whites.
Makes a big difference . That is if you like Lighter
crispier Waffles.
Pancakes it just makes them lighter.
I just made another batch yesterday.
I asked the guys on the road crew to come in for Coffee and Waffles.
Now I have to make another batch. They're all gone.

Well recieved from others, but none are the same as I had made. I could tell the minute they hit the cast iron.

I said, forget it right now. I have to make bluberry/banana bread for a commissioners meeting Tuesday,
and I will be out of eggs for that. Hate to keep going over to the neighbor to get more eggs, I already bummed 4 dozen off him this week for other breakfast meetings.

For now, let them eat bread! lol

Don't give up too easily. Another Spoon of flour, etc. ,might make a Difference.
Even the Temperature of the Cast Iron.
Little things mean a Lot. I think that's a Song Title !!!!!

I made your whole wheat waffles for breakfast...Lee (DH) thought they were to sweet will cut down on the sugar to 1/4 cup next time. I loved them!!! Nice and fuffy and light.

But 1/4 cup is good.

They freeze good, better if they are a light gold color.

Don't forget, when you throw them in the Toaster oven,
baste them with water if they are over Cooked a little.

I am off the pancake frenzy, lol.
Made the banana/blueberry whole wheat bread, double batch and so far 2 of the 4 pans are gone.

I'll have to post the recipe, it was published in the 80's here by the hospital when they had heart promotion series for businesses and published recipes.
