Your link took me to another (older?) ATK pancake recipe. The pancake recipe I saw on TV yesterday was quite unusual. The dry ingredients were creamed with butter in a food processor, and liquids were added later. I believe the recipe even had malted milk in it (?!).

I looked in all my America's Test Kitchens cookbooks and didn't find anything similar. The show is on our PBS channel tomorrow and I'll have to try and catch it and see if they do your pancake recipe.

While on the topic of pancakes... The WORST pancake recipe I made came out of Peter Reinhart's "Crust & Crumb". What insipid pancakes - a total waste of ingredients.

Disclaimer: "taste" is always subjective, and such a personal thing... I made the Reinhart pancakes because someone gave them rave reviews, so there's the perspective of "taste". Dear hubby said the "foam rubber" pancakes at McDonald's were better than the Reinhart recipe.

Definitely subjective- I love McDonald's hotcakes.
At home, all my pancakes are always some kind of multigrain with various flours, honey, buttermilk, etc. ( which dh loves) and sometimes I crave a white flour pancake!

I hope you get to see the new ATK demonstration. Quite unusual! By the way, while I haven't tried Reinhart's pancake recipe, I have found a couple of his bread recipes not to my liking. So far I haven't been able to make a homemade pancake recipe better than Aunt Jemima's Original (with buttermilk substituted for regular milk).

Is it the Better than the box pancake Mix? It was on TV here locally.
2 cups all-purpose flour
2 cups cake flour
1 cup non-fat milk powder
3/4 cup malted milk powder
1/3 cup sugar
2 tablespoons baking powder
1 teaspoon baking soda
1 tablespoon salt
12 tablespoons (1 1/2 sticks) unsalted butter , cut into 1/2 -inch pieces

1. Process all ingredients in food processor until no lumps remain and mixture is texture of wet sand, about 2 minutes. Freeze in airtight container for up to 2 months.
2. To make 8 pancakes: Whisk 2 cups mix, 2 lightly beaten large eggs, and 1/2 cup buttermilk in large bowl until smooth. Pour 1/4 cup portions of pancake batter onto lightly oiled large nonstick skillet or griddle and cook over medium-low heat until golden brown, about 2 minutes per side. Repeat with remaining batter as desired. Serve. (If you don't have buttermilk, make clabbered milk by whisking 1/2 tablespoon white vinegar or lemon juice into 1/2 cup whole or low-fat milk and letting the mixture thicken for 10 minutes.)

The recipe is the same one ngraham posted. I'm going to take my favorite (sticks-to-your-ribs) multi-grain recipe for pancake mix and add the malt powder. I already use milk powder, but the grains are freshly-milled spelt and soft white wheat flour for lower gluten, plus a fine grind of cornmeal, flaxmeal, and for some "tooth" I add multi-grain cereal (looks like chopped whole grain - I mill my own but any of Bob's Red Mill varieties - 5-grain, 7-grain, etc. will work). I may try malting the grain for the flour, instead of using malt powder. Malted grain is easier to digest and sweeter tasting - but a LOT more work. Second thought, I'll buy malt powder....(LOL)

I've purchased British pancake mix at World Market that was malted, and we liked it. I wonder if they got the idea for the mix they made on ATK from Carbon's Pancake Mix at the link below...

Pancakes and Waffles Recipe
Ingredients:
2 1/2 cups milk ( I�ve been using powdered milk, also)
2 eggs ( separated ) .
1/3 cup of Veg. Oil
2 heaping tablespoons of Vanilla
Pinch of salt
1/2 cup Sugar
1 cup of Wheat Flour
4 teaspoons Baking Powder
All Purpose flour

I beat the egg whites first , so I don�t have to clean the beaters.
Beat the egg whites with a teaspoon of sugar, until peaked.
After the batter is made
Add 1/2 the egg whites to the batter and fold in easy.
Beat the other 1/2 of the whites until very stiff and fold these in also. .

Pancake Batter:
Put the first 6 ingredients ( except egg whites ) in a mixing bowl and beat until smooth.
Put in the Wheat flour, Baking powder. and some All Purpose flour.
Beat until smooth. Add enough AP flour to thicken slightly,
For Waffles:
Thicken a little more, to where you have to move it around with a spoon,
when it is put on the waffle iron . Then do the egg white thing as in the pancake batter.
When baked I cool them fast on a rack and put them in a plastic bag,
and right in the freezer.
If you overcook a little, dampen slightly with water,
before you put them in the toaster oven.
As for the waffle iron , I have a very old round one with adjustable heat Range.
It makes a waffle about 1/2 inch + thickness. For me this is just right,
for the amount of butter and syrup that you can put on top.
I found a Cuisinart mod.WMR-CA to match my old one.
Now I can make Waffles in Stereo
I don�t use the Belgium Waffle Maker ; except when I�m adding
Ice cream and fruit topping , because it�s too much waffle for the
amount of syrup and butter. But may be good for you.!
If I want a Belgium Waffle, I just make a double decker and
put fruit or whatever filling in between.
With Ice cream on top.
Then you have more cooked surface area , on the Waffles.
Which is where the flavor is ( the cooked surface )

The flavor of malt lends a lot to baked goods...I sometimes add malt-o-meal cereal to a whole wheat bread....or rather to a half whole wheat bread....half the flour is whole wheat.
And that extra powdered milk ought to be good too.
I don't know where to buy malted milk powder any more...it used to be a staple along side of the Ovaltine and the Postum!!

I'll send you some malted milk if you want! I bought a jar of it for a recipe and now I can't figure out what to do with the rest of it! :) Ok, ok, maybe I could send you a brand new one... :P Let me know!

Sprinkle the malted milk powder over icecream with chocolate sauce....called a dusty road sundae.....and if you add peanuts it becomes a rocky road....YUM!
No need to send....not worth the postage!...I'll somehow figure out were to buy some.
