Recipe of the Day January 25 - Apple Pancakes!

Apple Pancakes

Apfelpfannkuchen (German for "apple pancakes"). Slices of apple, dipped into pancake batter, deep fried and sprinkled with sugar and cinnamon. Enough for a main dish but also nice as a dessert.

Ingredients

Â 10oz / 300g flour, sifted

Â 4 eggs

Â 2 tsp sugar

Â 1/8 tsp salt

Â 1 tbsp vanilla extract

Â 1 tbsp gin (optional)

Â 1 cup milk

Â 1 tbsp vegetable oil

Â 3 apples, cored and cut into Â½ in / 1cm slices

Â at least 1 cup / 250ml vegetable oil (for frying)

Â cinnamon and sugar for sprinkling the pancakes

Â cream and mint leaves for garnish

Preparation

1. Combine eggs, sugar, salt and vanilla extract. Beat until foamy.

2. Stir in oil and flour, add milk. Add gin if desired. Mix well. The result should be a fairly thick pancake batter.

3. Core apples, cut into Â½ in / 1cm slices.

4. Set non-stick pan over medium-high heat. Add 1 cup / 250ml of oil.

5. Dip sliced apples into pancake batter. Coat well. Drop into pan and put 1 tbsp of batter on top of each apple slice.

6. Fry until golden brown on one side, then turn and fry until golden brown on the other side.

7. Remove from pan, blot dry with paper towels, keep warm. continue frying until all pancakes are done, add oil if necessary.

8. Sprinkle with sugar and cinnamon

9. Serve warm, optionally with a bit of cream and a few mint leaves.

Those sound so good!

Here is a recipe I have saved to try.
Not apple, but it is German!

PEACH KUCHEN

2 c. sifted flour
1/4 c. sugar
1/2 tsp. salt
1/4 tsp. baking powder
1/2 c. butter
9 or more peach halves, fresh or canned
1 tsp. cinnamon
2 egg yolks
1 c. heavy cream

Preheat oven to 400 degrees.
Sift flour, 1/4 cup sugar, salt and baking powder into a bowl. Cut in butter, using two knives, until the consistency of corn meal. Pack into an ungreased square pan (8 x 8 x 2 inches) pressing against bottom and sides. Arrange the peach halves, cut side up, in three rows of three or three rows of four, depending upon the size of the fruit.

In a small bowl combine the 3/4 cup of sugar with the cinnamon. Sprinkle sugar evenly over the fruit. Bake for 15 minutes. In a small bowl heat the egg yolks, stir in the heavy cream. Remove the Kuchen from the oven after the first baking period.

Pour the cream mixture evenly over the fruit and return to the oven for 30 minutes. Remove from oven and cool in pan. To serve: Run a thin knife or spatula along the edge to loosen the crust. Cut Kuchen in serving pieces and remove piece by piece.

Used to make this long ago!

Sausage and Peach bake
2 cups packaged pancake mix or Bisquick
1 cup milk
1 (16 ounce) package brown and serve sausages
1 (16 ounce) can peach slices in heavy syrup
1/4 cup sugar
1 tablespoon cornstarch
3/4 cup maple syrup
1 tablespoon margarine or butter
Directions
1Prepare pancake or bisquick mix with the milk.
2Turn into a greased 13x9 inch baking dish.
3Drain peaches, reserving 1/2 cup of the syrup and set aside.
4Halve the sausages cross wise-same for the peaches.
5Arrange the sausages and peaches on top of batter-ie.
6sausage, peach, sausage, peach.
7Bake at 350 degrees for 20 minutes.
8Remove from oven, let cool for 15 minutes or so, cover with foil and refrigerate overnight.
9Next morning heat oven to 350 degrees and cook casserole for 20 minutes.
10Serve with warm syrup Syrup: In a medium saucepan whisk together sugar and cornstarch until no lumps remain.
11Turn heat to medium high, adding the reserved peach syrup, cooking to thick and bubbly.
12Stir in maple syrup and margarine.
13Serve warm.

Pour teriyaki sauce over shrimp. Cover and refrigerate 1 hour. Bake at 400 degrees, uncovered, 20-25 minutes or until bacon is crisp. SPICED PEANUTS Spiced peanuts with Cajun seasoning blend and cayenne pepper. Ingredients: a.. 2 teaspoons vegetable oil b.. 1 1/2 teaspoons Cajun or Creole seasoning blend or chili powder c.. 1/4 teaspoon cayenne pepper, ground d.. 2 cups lightly salted dry roasted peanuts Preparation: Heat oil in a skillet over medium heat. Stir in seasoning and cayenne. Add peanuts to skillet; cook for 2 minutes stirring constantly. Serve warm or at room temperature. Store for up to 3 weeks in a tightly covered container. Serves 8.
