LOOKING for: sweet potato pancake recipe

A few years ago a friend, who lived in Georgia at the time, gave me a package of sweet potato pancake mix. We loved it and it's long gone. I recall that it seemed to have spices resembling those used in pumpkin pie. Does anyone have a recipe for these that I could try. I'll be going on a wilderness canoe trip with her and another friend from Georgia in September and would like to try adapting a recipe for dehydrated ingredients (already dried & powdered some sweet potatoes). thanks.

Here's one....

SWEET POTATO PANCAKES

1 lb. sweet potatoes
Cold water
1/4 lemon
2 eggs
3 tbsp. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 tbsp. granulated sugar
2 to 3 tbsp. oil
2 to 3 tbsp. butter

TIPS: Pancakes can be made ahead. Reheat in the oven at 350 degrees for 5 to 10 minutes.
Peel potatoes and shred fine. Place in large bowl of cold water mixed with juice of 1/4 lemon. When ready to cook, drain well and pat dry.

In large bowl, beat eggs lightly. Blend in flour, baking powder, salt, cinnamon and sugar. Stir in sweet potatoes.

In large skillet over medium-high heat, heat 1 tablespoon oil and butter. Spoon about 3 tablespoons potato mixture into skillet, forming 3-inch pancake. Repeat, spacing pancakes in skillet. Cook until golden on underside. Turn pancakes over. Press lightly with spatula. Let cook until other side is lightly browned and crisp.

Transfer to paper-lined baking sheet. Keep warm. Repeat with remaining batter, adding oil and butter as needed. 4 serving, 12 pancakes

Just use mashed fresh sweet potatoes for this if you don't want to use canned: SWEET POTATO PIE WITH STREUSEL TOPPING One 23 oz can sweet potatoes, drained & mashed (1 3/4 cup) One 14 oz can sweetened condensed milk (like Eagle brand) 1 egg 1 tsp nutmeg 1/2 tsp cinnamon 1/4 tsp ground ginger 1/8 tsp ground cloves, optional 1 unbaked pastry shell Mix potatoes, milk, egg & spices together until smooth. Here is a link which includes baking time for the uncooked potato. You can also google twice baked potatoes for more recipes. Yogurt is often substitued for sour cream. And there are low-fat cheeses or you can omit it. Onion is the usual vegetable used but if you like broccoli or cauliflower you could parboil it and gently mix into the potato mixture. Ham could be used. Whatever suits your tastebuds. Thanks for the recipe, Msprettyky. I remember the taste of ones I had as having more than cinnamon but will try the recipe as is then modify spices a bit to see if I can find one that matches my memory. If they don't turn out to be a hit, maybe I'll order some thru the link you provided, Ginger. Ginger, hope that storm mentioned in another post has dissipated or passed by your home.
