(Some but not all) Kitchen walls have adobe texture--how to paint

I'm getting ready to repaint my kitchen, but there are some weird things going on...

Some of the walls have an adobe-like texture to them, and some have a smooth texture from the original plaster (1950's house). How the heck do I paint this?

We had a professional painter come and give us an estimate and he recommended doing a light orangepeel texture on all walls rather than trying to sand everything down to smooth again. His estimate seemed really high ($1700) although it included a second room (dining) and also he was going to tear down and replace the old trim and mouldings around all the doors and windows as well.

Any expert thoughts on his idea of texture and/or the cost of this project? If we do it ourselves, we will still have weird have texture walls and half smooth walls and I just don't think it will look right.
