Need side dish's and ideas for a graduation party
Comments (6)My son graduated last year - I had about 125 people at his graduation party. The suggestions you got above are good. Here are some of mine: We had a rootbeer keg - it was a big hit. Ordered it from the liquor store, very popular with young and old alike. Our entire keg went in 3 hours. It was set up outside because it gets sticky. We set up a volleyball net in the back yard. The boy vs girl volleyball competition was intense as most of the kids were athletes. I'd do the extra bars and salads as suggested, borrow coolers if you need to keep them cool. The only thing that struck me in your email is to make sure that you really can get the red, white and blue decorations you want, lots of other parents might have the same idea and you may have slim pickings if you wait too long. If you are in a big city it may not be a problem but if you are in a town with only 1 or 2 high schools, you might have a problem. The nice stuff will go fast. Finally, get help to keep the food trays filled, coffee made, trash cans emptied, toilet paper and clean towels in the bathrooms, etc. It's a lot of work and you want to at least have time to say hello to your guests. Assign someone to take pictures of your daughter and guests, especially those important ones like grandparents, aunts, uncles, best friends, etc.. POPCORN CAULIFLOWER -arabellamiller 2 heads cauliflower 1 tsp salt 2 tsp sugar 1/4 tsp onion powder 1/4 tsp garlic powder 1/2 tsp paprika 1/2 tsp turmeric 6-8 Tbl lve oil Cut the cauliflower into small florets, toss the stems. Combine all the ingredients in a bowl and toss the cauliflower to coat it. Put the cauliflower in a single layer on a lined pan and Roast at 450 for about 35 minutes, tossing occasionally. Or this one from Sol is wonderful. Cauliflower Au Gratin - sol 1 head cauliflower cut into florets, stems chopped Salt 1½ tablespoon olive oil 1 tablespoon minced shallots 1 tablespoon minced garlic 1 cup vegetable or chicken stock 1 cup heavy cream [you could get away with less] ½ tablespoon prepared horseradish ground pepper ½ Cup grated Gruyere cheese Preheat the oven to 425ºF. Steam cauliflower florets for 6-7 minutes or until tender. Drain well and transfer to a large casserole dish. Heat the oil in a large saute pan and add the cauliflower stems, shallot and garlic. Cook until tender. Add the stock and cook until reduced by half, about 5 minutes. Add the cream, horseradish and Gruyere and cook until cheese is melted. Salt and Pepper to taste. Transfer to a blender and purée until smooth. Pour the sauce over the cauliflower florets and stir until well coated. Bake until golden, about 20 minutes. oooh, and I love these. Gina's Brussels Sprouts Cut the sprouts in half, lay them crowded in a shallow casserole, just cover with cream, chopped garlic, salt and pepper to taste. Cover casserole and bake in the oven at medium heat until just tender, add grated swiss or parmesan cheese at the end and cook uncovered until cheese melts. I've also tried adding a bit of nutmeg. So sometimes I do that, sometimes citrus zest. I've also added breadcrumbs with the cheese. Anyway, they should come out with a sweet nutty flavor. Comments (18)I have become addicted to Mock Mashed Potatoes made with cauliflower! I had seen the recipes from time to time, but never thought they would really taste like real mashed potatoes -- but they do. My preparation is very simple. I've seen it with Ranch Dressing or non-fat Ranch Dressing added to it also. Steam a head of cauliflower until very soft. Mash. Add I Can't Believe It's Not Butter & salt to taste. ---------------------------------------------------------- Here's another one, a bit more complicated but still easy: Mock Mashed Potatoes Your guests will probably never know that these rich mashed potatoes contain no potatoes at all. They are made from cauliflower. Great for low-carb diets. These are doubly good with bacon bits added. INGREDIENTS: 1 head cauliflower, cut into florets (discard core and large stems) 1 (14 ounces) can chicken or vegetable broth (or homemade - about 1-3/4 cups) 2 Tbsp butter 2 ounces cream cheese 2 Tbsp sour cream 1/2 cup shredded cheddar cheese 1/4 cup sliced green onions, white and green parts Salt and freshly ground black pepper to taste PREPARATION: 1. Place cauliflower florets in a large saucepan. Add chicken broth and bring to a boil. 2. Cover and simmer until very tender, about 12 minutes. 3. Drain thoroughly through a fine sieve and return to the pot over low heat. 4. Cook about 2 more minutes to dry out excess moisture, stirring constantly. (It's okay that they break apart.)
