For many years we have had brisket, parsley new potatoes, fresh steamed asparagus, homemade dinner rolls and strawberry shortcake. This year we may have a spiral cut ham and a new set of sides--good question.

We also do lamb....and oven roasted potatoes with garlic and oregano, asparagus...sometimes with hollandaise...sometimes just lemon and butter... a spinach salad with strawberries and honey balsamic dressing...bunny buns and usually a lemon dessert of some sort.

We do ham, too. Side dishes generally are either potato salad or pasta salad, deviled eggs, baked beans, rolls, and some kind of green cooked vegetable, e.g., asparagus or sugar snap peas or greens. Once in awhile I make fresh asparagus and mushroom soup. Desserts change from year to year, depends on what I feel like doing. Since strawberries are still coming in from Plant City, I might do strawberry shortcake this year, haven't had any of them at all yet.

For the past several holidays, we have been cutting down on the amount of food prepared. Here is our menu for this Easter.

This year, my parents are hosting,but I am cooking. We're doing smoked ham,smoked chicken and smoked pork,homemade rolls,potato salad,Mac and cheese,Devilled eggs,my cream cheese Olive chip dip,meatballs (idk why, I guess the kiddos like meatballs) a fruit tray,a cheese tray, guacamole, fresh salsa and spinach artichoke dip. The dips are mainly to keep people out of my way while I'm cooking everything else. And again,kiddies like dips, just have to watch to make sure that there is NO DOUBLE DIPPING!!!! They're pretty good about it though, they like to have their own little bowl of dip each.

We do a shared extended family meal. Everyone brings whatever and the host/hostess provides the meat/poultry (not seafood or fish because one person has allergies). It always is in interesting combinations we wouldn't normally put together, but it all gets eaten or doggie bagged! Lots of fun, really.

This year I'm just bringing a cake, well, a celebration cake of 14 layers (a la Martha) since everyone loves frosting more than the cake.

I may bring some garlic spread/dip or garlic bites since I bought a big bag of garlic for pickling and found that most bulbs were sprouting so I'll be removing the little green innards and dehydrating the majority of it.

Not sure yet, but definitely ham with pineapple, sweet potatoes, maybe baked beans, biscuits, potato and cheese casserole, tossed salad, deviled eggs. I'm debating on what veggie casserole to make. Cake with chocolate frosting for dessert.

I'm not sure either. Probably a ham of some sort. Can't decide whether to have roast vegetables or have salads (again). Might do potatoes Anna/ Dauphin/ Gratin ?? ... sliced potatoes with onion, cream and with grated cheese on top.

I was invited to my step-sister's easter dinner. She usually does a somewhat lighter version of an italian traditional meal. She recently ended an extended diet without gluten or sugar. Recovering from childbirth. But the family is off for a month in the ancestral land of fine gluten-rich food - Italia. Anyway I have been asked to make something glutinous or gluteny....

I need to get on the ball and decide soon. I am supposed to take a dessert and an appetizer to my sister's house. Last year for dessert I made a dense chocolate cake with whipped cream and chocolate Easter eggs from Nigella Lawson. I may do that again. Our church has an Easter breakfast so I have to prepare something to take to that. Frankly, I am too full to eat lunch but still need to just make a decision on what I will bring for an appetizer and dessert.

Ours is pretty basic, glazed baked ham (NOT spiral cut) & scalloped potatoes for sure. Probably a green salad containing a wide variety of baby greens. Maybe that pineapple casserole made with chunked pineapple, cheese, I forget what else, but it goes so good with ham! A green side dish of some sort. I'm seriously considering introducing the family to the roasted Brussels Sprouts with cranberries in a reduced Balsamic vinegar glaze (Pioneer Woman). Personally, I'd be happy with just that dish, it really is that good! Oh, and dessert is always fresh strawberry pie, even though I decided long ago that there is no such thing as good fresh strawberries in Texas. As no one else here has had fresh strawberries that don't have the hard white center, they think what we have here are good. That's okay, I just make the pie, I don't have to eat it!
