Can you review my meal for Easter please...

I won't go into a long story but plans have changed for us in our household due to husband's surgery so now Easter is going to be at my home for 12. I was able to get a very good deal yesterday on Filet Mignon so I bought them. Here is the menu and tell me if you would be happy with this or what would you change:

Filet Mignon cooked on the grill

Crab Imperial

Roasted Potatoes (probably a combination of yukon & red)

Roasted Asparagus w/Parmesan cheese

Greek Salad

Deviled Eggs

Rolls/Butter

Dessert (don't know what it will be because I have assigned to SIL)

I originally thought of potato salad because I could have it made ahead of time but don't know if that seems too out of place with Filet Mignon. So I thought I would do roasted potatoes as I could put them in the oven and then about 10 mins. later on a seperate pan put in the asparagus.

What do you think?

And, this is going to be served buffet style not sit-down.

To be honest, several of us in the family like having some hot and some cold dishes - we like the contrast but do you think potato salad would be odd? I really don't like making deviled eggs and potato salad with eggs in it too but my family likes deviled eggs and I'm sure there are some that don't see that along w/mignon either!

Sounds good :-)

If you want to make the potatoes ahead, an herb/vinaigrette roasted potato salad might go better with the fillet than one of the mayonnaise-type potato salads.

Shepherds Pie is always good. Or what about Salisbury steak? Can be made earlier in the day and just warmed up to serve. Home Cookin Chapter: Recipes From Thibeault's Table Salisbury Steak In Mushroom And Green Peppercorn Sauce ====================================================== What I call "Diner" Food. Serve with mashed potatoes and your favourite veggies. 2 Pounds of ground Sirloin 1 onion finely chopped 2 cloves of garlic minced 2 Tablespoon chopped fresh parsley 2 Teaspoon chopped fresh thyme 1 Tablespoon of Worcestershire Sauce 1 Tablespoon Dijon mustard Salt and Pepper to taste Sauce 1/2 small onion chopped 1 garlic clove minced 1 Tablespoon green peppercorns Fresh Mushrooms sliced 2 Tablespoons Flour Broth 2 to 3 cups (Beef or chicken) Pan drippings plus 1 to 2 tablespoons of butter or oil. . Saute onions in 2 Tablespoons of olive oil until tender but not browned. Add minced garlic and cook for 1 minute. In a bowl combined ground sirloin, parsley, thyme, Dijon mustard, Worcestershire sauce and salt and pepper. Add onions and garlic and mix well. (I use my hands). Form into oval shaped patties. (I made 5 nice size ones from the 2 pounds, but you could make smaller if you prefer) Brown the patties in a heavy skillet in a little olive oil. You can also brown these in a grill pan. Remove the meat from the pan. Add a little more oil if needed and saute the onions, garlic and mushrooms. Sprinkle with a little flour, cook for a couple of minutes and add the broth and the green peppercorns. Add the patties to the pan, cover and simmer on low for at least one hour. Make sure there is enough sauce to almost cover the steaks. Salisbury steak should be very tender and not have the texture of a just fried hamburger. Simmering the meat n the gravy also enhances the flavour of the sauce.

Hi Kids, We will not be having a big Easter dinner but I can't get away from tradition all together. No company for us and no invites to go out so we will be taking advantage of the good weather to get some heavy yard work done. I will start a pork butt in the crockpot in the morning so we will have some yummy pulled pork sanwiches at the end of our day. I also made some yummy pickled eggs last saturday so by tomorrow they should be perfect! It will be a very different Easter but I can live with change. I look forward to the pork. gazania, I hope you enjoy your pickled eggs and beets as much as I am going to enjoy mine. My kids love them when they are here but my husband can not stand them. He hates hard boiled eggs and when you add beets to the mix, he runs for the hills. I love them and can't get enough! Enjoy! It sounds like all of you will have wonderful meals, start to finish. Tons of new growth but lack of buds could be from being given too much nitrogen (fertilizer with a higher first number.) I have several of these plants and don't do anything differently to them than the hundreds of other plants I have. Taken outside when danger of frost has passed, brought in to escape the same. That's one of the things I love about it, it blooms often, whenever it feels like it throughout the year, w/o any special care. This gnarly old woody gal has a bloom now, made a couple last month, from buds that started forming in September, when it was still 90+ most days and about 70 at night.

Moonie, the cook/chef at my mothers retirement apartment facility is pretty amazing too. I've been there when beef wellington has been one of the two nightly dinner entrees and its been prepared as well as any I've ever had. I don't know yet what we're having for Easter though, we're thinking of meeting someplace my sister can join us too (165 miles in between her and Mom) after everyone has been to their respective church service so that will mean restaurant close to the interstate corridor. Which will be OK, we haven't all been together since Christmas Day. I have a BIG ham here I need to cook sometime in the next few weeks (Christmas gift), will probably make it buffet, find a night that works for several and have a crowd here then - hoping not too many tired of ham right after Easter.

Lovely menu Dixie!

I agree that potato salad seems out of place with beef tenderloin. I could go there with baked ham but for some reason not filet.

The roasted potatoes and asparagus are perfect. Another option could be the roasted squashed potatoes discussed a while back but roasted is a great choice.

I don't find the deviled eggs out of place because, heck, it's Easter and you gotta have eggs!

Your menu sounds delicious! I have a recipe for Blue Cheese Potato Salad that goes very well with filet. I'd be happy to post it if you want to see. No eggs in it, so no conflict with deviled eggs... :)

I think your recipe sounds perfect....but I don't think that 10 minutes later to put the asparagus into the oven will be right. I like to roast potatoes at least 45 minutes and to cook roasted asparagus only about 10 or 12 minutes...
Perfect Easter menu...and you have a salad and deviled eggs for the cold...if someone wants to have something cold.
I'll bring some wine....what time is dinner?

I think your menu sounds perfect also. But I don't think potato salad and tenderloin go together, but what about a potato casserole and you could do that ahead of time. I like to do as much ahead as I can.

Scalloped potatoes would be good and you can make them ahead then bake. Or twice baked potatoes...everybody I know loves them. Or make ahead mashed potatoes.

I agree, the menu sounds perfect to me as it is. I think potato salad is more of a "plain" food, and so to me it would be out of place with filet.

Although Nancy's blue cheese potato salad might be a big hit, lots of people contaminate....um....sauce their filet with a blue cheese sauce. (grin)

Add me to the guest list and I'll bring an extra dessert!

Chase is that PW's smashed potatoes that you are speaking of? I have made those and considered them but decided not to do that - why I don't know?:) They are good.

Jessica I thought about a herb/ving. style potato salad but thought it would compete w/the greek salad.

Nancy I love Bleu Cheese and so do "some" others but the rest would stick their nose in the air! LOL!

Linda - I agree w/ you and I worded wrong. I normally roast potatoes (cut in quarters) about 30 to 35 mins. at 425. You cook them longer? Asparagus I roast about the same amount of time as you.

Trix. - I though about a make ahead potato casserole and Bumble the same w/scalloped or Au Gratin but I feel like that would be a bit much since the Crab Imperial is really rich. Twice baked potatoes crossed my mind also.

Everyone is invited!!! The more the merrier! Bring on the wine, etc. I'm ready.:)

Sounds perfect to me....I wouldn't change a thing. I'll bring wine, extra dessert and do the dishes and clean up for a spot at the dinner table. : )

Yes Dixie those are the potatoes I was think of. Easy, different and I think they would be great with filet.....but the roasted potatoes are perfect too.

I'll help David with clean up and bring wine....I don't do desserts!You better go back and get another filet 'cause you are now up to 18 or 19 ! LOL

Sounds wonderful. I usually make double stuffed potatoes with fillet and they can be made ahead of time as well!

Looks yummy. FWIW, I think tiny roasted red poaotoes would be yummy as well as colorful.

Thank you all again for the review of the menu and the ideas. I feel comfortable now! beanthere - I like the taste of the tiny red potatoes too plus I also like the color. I like having color on my table as well as in my house.

agnesd I haven't heard of Yukon's in red. I will have to research that. Thanks.

Chase LOL!!! At the price that I got them at, I wouldn't mind at all. I really was stunned. Now, I will hold my head down in shame because I could have gotten even cheaper if I had bought the whole tenderloin but I caved and had the butcher cut them for me.:(
