Calculating meat for 3 different sliders & walking taco's.

I am catering a business Open House over a two day period for my cousin, who has given me counts of 250 for Saturday & 150 for Sunday. I am making the following: Shredded Pot Roast sliders, BBQ pork sliders, Hawaiian Hammies, & Walking Taco's. These will all be on different tables, each with differing salads in 4 oz. cups, differing desserts, & a 4 oz. bottle of water. (It's a "school" theme so I'm setting up 4 different "Lunch Tables": Elementary, Middle School, High School & College). I have no clue how to calculate how much of everything that I need, because I have never done a two day event for anything other than family reunions where I just set out a buffet. The guests will range in age from very young to very old. Can anyone help me with my math?? There will also be multiple decorated cookies & other treats spread around the business for people to grab and go.
