Which sweet potato variety do you prefer?

I get confused when I encounter recipes that call for sweet potatoes but don't indicate which variety. To me, there's a world of difference between the light yellow/tan skinned sweet potatoes like Jerseys that have a dry, firm, and creamy colored flesh and the red-skinned Garnet "yam" type with bright orange, moist, & soft flesh.

My local grocery stores sell the light colored sweet potatoes, garnets, and often either Beauregards or Jewels. The latter two have orange flesh but are somewhat firmer than Garnets.

So when I see a recipe for a sweet potato gratin, or casserole, or baked fries, etc., I'm never sure which variety is called for unless there is an accompanying picture. Even then, orange flesh alone does not give enough information.

The only certainty I have is that Garnets are so moist and soft that they wouldn't be good for any applications other than baking whole or mashing. (They're my favorite. I don't care much for the texture of the light colored sweet potatoes.)

So, which variety do you prefer? And, what do you make with your favorite sweet potato type?
