Supper Time Friday the 13th

I think I will fix myself a hamburger, some creamed corn and a lettuce salad as well as a cup of hot tea. I don't feel like cooking much this evening. It has been sunny here all day but windy and cool. How is your weather today and what are you having for supper?

We have reasonably nice weather. I'm not sure what I'll get, but I think it's the blackened scallops, corn and bacon, with "tobacco shallots". At least that's what looks good on the menu where we're going for dinner. Can't wait! We're also going out for drinks before and I think the app will be "wicked Cajun barbeque shrimp with spicy cayenne-garlic butter sauce". Or the sweet chili calamari. He loves squid. My tastebuds are primed, so hope it's a good night out. My son said in his text "BEST NIGHT EVER (0.0)" I think he was swooning. He doesn't typically talk in all caps. And those look like some huge eyes. He'll get steak with duck fat fries.

Definitely a mixed bag fall/wintry day today. Sun, clouds,wind, rain, hail and snow, all throughout the day.

I'm just heating up some leftover pasta primevera that we had last nite.

We still had some ham left over from Sunday dinner. I'd made a yummy soup with some of it a few days ago, so tonight I decided to make ham, cheese, and egg biscuits, and my DD cut up some veggies. I used the rough puff method of mixing the biscuit dough--they came out crispy and layered and really good. I julienned the ham and warmed it in the skillet after I cooked the eggs, mounded it on top of the egg, covered with cheddar cheese, and put them back in the warm oven until the cheese was soft. If you've never made biscuits that way, I recommend it!

Nicole - here's a link to the recipe I used http://www.food.com/recipe/not-your-usual-lemon-artichoke-chicken-177737 Since I was just cooking for 2, I only used 2 chicken breasts but made the entire amount of sauce and all of the artichoke hearts. I added the capers, as well. Other variations of this recipe called for using creme fraiche instead of cream, and frozen artichoke hearts (thawed) instead of canned and that's what I did differently. Orzo really worked well alongside of this.

Cream of Wheat was one of the staples on our breakfast table as children in the snow belt of central NYS. That, and Cream of Rice, Wheatena, Maypo, Ralston hot cereal, oatmeal, MaltOmeal, and some sort of chocolate Cream of Wheat were often options on the table to help stoke the internal furnace before we headed out the door on a long walk to school. Yum...healthful comfort food. ANYway, it's cold here, too! I made Ina Garten's seafood chowder (more or less) for us last night with homemade stock, shrimp, scallops, and cod. My version is full of vegetables, too....so good. It's going to be colder today and I think that I might do chili in the slow cooker to eat on all afternoon. Maybe the sprites and my neighbor will want to come over for some fireplace time. The girls are getting much better about letting the adults chat together while they entertain themselves in our midst. I can clear the central coffee table and put out a new jigsaw puzzle for them.

Hubs took Amiee and the boys to Steak and Shake for burgers and shakes. I stayed home I'm not any where near well enough yet to go out. I ate a cup of Liptons Noodle soup and a grape popsicle. I had hubs take chili out of the freezer for tomorrow, will have a garden salad and corn muffins with it.

Crispy Potato Roast, from the recipe Lindsey posted for Jasdip recently, with DD's spinach and green salad. I made enough for leftovers tomorrow.

I put a nice pork loin roast in the oven with lots of onions and garlic and red potatoes made rice to go with the gravy. I stuffed it with onions and garlic.

Roasted chicken, oyster dressing, mashed potatoes and gravy. There were also green beans, and cranberry sauce. No room for that nonsense on my plate. Best roasted chicken I have ever made. And the gravy came out phenomenal!

Left over tamale casserole. Then, heated up danish I purchased when I drove back into town, got a killer deal on a used over the oven SS GE microwave. Had to drive to the next town over to get it, good thing gas is so cheap right now. :0)

I roasted a chicken last night, too. Well seasoned with herbs (sage, rosemary, and thyme, lol) and basted with ghee.

Also roasted Brussels sprouts and parsnips and a mixed grain pilaf with onions and mushrooms.

It was cold and windy all day so we had chili with cornbread. Peach pie later for dessert.

Since I live alone, it is a treat when someone comes to eat with me. Tonight my son and wife came and we had Ritz cracker/cheese chicken, mashed potatoes, fresh green beans, Hawaiian salad, and fresh apple cake.
