Friend having knee replacement surgery upcoming, and she had her pre op consultation.

Afterwards, we lunched at a well known soul food restaurant and she was thrilled.

She had "real" country fried steak, cabbage, mac and cheese. Happy Camper!

Turkey Burgers!

Cloudy and sunny day today. The temperature is turning cold again starting tomorrow and all next week, with snow in the forecast.

We had leftover scalloped potatoes (they're so good reheated), with cauliflower and chicken breasts. I made granola bars the other day and we're finishing those up with ice cream.

We still had some ham left over from Sunday dinner. I'd made a yummy soup with some of it a few days ago, so tonight I decided to make ham, cheese, and egg biscuits, and my DD cut up some veggies.

I used the rough puff method of mixing the biscuit dough--they came out crispy and layered and really good. I julienned the ham and warmed it in the skillet after I cooked the eggs, mounded it on top of the egg, covered with cheddar cheese, and put them back in the warm oven until the cheese was soft.

If you've never made biscuits that way, I recommend it!

First day of grilling in North Idaho. What a glorious day! Flat iron steak on the grill, vegetables on the grill, and Pioneer Woman's Perfect Potatoes au Gratin, a recipe from my "to try" file.

When visiting PA I was given a scrapple recipe by my brothers new in-laws. It's diced potatoes, bacon, onion and cheese. But......it's nothing like authentic scrapple. This is actually gooooooooooooood! :0)

Well I decided to throw some diced potatoes in the oven and some sliced yellow squash too. Still having a cheese omelet with it.

I made myself a smallish chicken noodle soup, and it was very good....just a can of chicken broth, a bit of leftover chicken, onions, celery and a bit of frozen peppers, and noodles, of course. It's chilly here today, and soup was a must.

Pizza night as always, but this time I took some leftover brisket from Sunday and used it as a topping. It was really good!

I treat myself to especially yummy food on Friday nights. Ate the last of the Sweet Potato Peanut soup tonight, along with a couple of dinner rolls and butter. I try to avoid eating refined carbs these days and the rolls tasted wonderful! I also made a microwaved Chocolate Mug Cake and ate it with ice cream. I had never made a mug cake before and it turned out fine, except that next time I would shorten the cooking time.

I made homemade cream of asparagus soup, and my version of shepard's pie.
