Earlier I tried some of the cream of potato soup with rivels I had made and sent home with Amber and some of the Irish soda bread, that I also sent along with her. A bit later I had a big kale salad. I try not to eat in the evening if I can help it. That was my main meal, what is yours today?

I've been working in the kitchen all day. Working on chicken soup for the freezer, Corned beef and cabbage for tonight (also some Irish Soda Bread) Made some cookies for tomorrow night DD and SIL coming over, and have the ingredients for crusty bread ready to go......will add the liquid later tonight. Getting ready to throw the cabbage in for the corned beef and have to peel some potatoes and make some horseradish spread for the corned beef.....back to work.

The last of the green pepper soup the neighbor gave me plus fried green tomatoes and I also fried some brussel sprouts before they went bad. Never tried that before, they got a little too brown, but tasted alright. It's almost 9pm. and I'm getting hungry for "something". Had veggies and dip, but that's not hitting the spot. ha. Maybe a little bit of cottage cheese.

We had spaghitti with meat sauce, and salad. I had a angel food cake mix, was in a white bag and I can't remember the name, I think it was for resturant use that my cousin gave me. It only called for water. I mixed it and poured it into a half sheet cake pan lined in parchment. OMG was it good. I never would have believed it came from a package had I had it somewhere. I ate mine plain with coffee. The boys dipped theirs in chocolate flavored Cool-Whip.

A new chicken dish for me. Donna on Cooking forum posted a recipe for Peruvian Chicken with a green sauce a couple of days ago. I have it prepped and ready to put into the oven in about another 45 minutes, green sauce made. I think rice and steamed carrot sticks for sides.

Spaghetti, and homemade meatballs from yesterday. I really love the meatball recipe, but it takes many hours of prep (which I usually try to do the day before) for a large batch. Then my basil plant could not provide sufficient foliage for the 3/4 C of minced fresh basil, and a trip to TJ added to the time. Luckily, I still had frozen sauce, so that part was simple. The garlic bread task was delegated out to a family member.

I'm still fighting this cold so I made a big pot of chicken soup. That ought to do it! I also made a loaf of 100% whole wheat bread. Love the smell of yeast dough!

I made a pork roast with cabbage, potatoes, carrots and green beans circling it. Had a piece of pound cake topped with apple pie filling.

It will be oven roasted corned beef, sautéed cabbage, mashed potatoes. Beef in the oven now, it has about 3 more hours to go.

Delicious dinner with aunt and uncle at their assisted living center. Potato leek soup, beef brisket, mashed potatoes, cabbage, brussels sprouts, parsnip, carrots, and key lime slice for dessert. A cookie and chocolate coins to take home. The other choice for dinner was roast chicken stuffed with wild rice.

Pot roast & broccoli & rice au gratin. Nothing fancy....I'm tired. I'll have more time tomorrow to cook. I'll use the left over pot roast to make Taquitos and serve them smothered. YUM!

traditional New England boiled dinner with corned beef, carrots, onions, celery, potatoes and cabbage. Extra pickling spices. Cooked for 4 hours. The house smells wonderful still.

Hubs took Amiee and the boys to Steak and Shake for burgers and shakes. I stayed home I'm not any where near well enough yet to go out. I ate a cup of Liptons Noodle soup and a grape popsicle. I had hubs take chili out of the freezer for tomorrow, will have a garden salad and corn muffins with it.

Homemade chicken soup with noodles chicken pieces, onions and green peas. Delish. The peas were for the St Paddy's Day green. :). We don't eat red meat so no corned beef. DH's mom was Irish and she made it all the time when he was growing up.
