My son didn't follow safe pickle recipe!

My son made the NCHFP pickled beans and had leftover brine from the recipe:

  • 1/2 cup canning or pickling salt
  • 4 cups white vinegar (5 percent)
  • 4 cups water
  • dry spices
  • garlic

He actually altered this brine by using a bit less salt and adding a couple of teaspoons of Soyu Soy Sauce.

Anyway, since he had leftover brine, he decided to make two pints of pickled cucumbers without looking at a recipe. He put small, whole pickling cukes in the jars, covered them in the brine and then processed for 8 minutes in a boiling water bath.

I showed him the safe recipes he should have chosen from. I pointed out that since he didn't salt and drain the cucumbers, the brine strength has been reduced by the juices in the cucumbers. He's out of town for a couple of more days, so he can't refrigerate them until he gets back. All in all the jars will have been on the shelf for 4 or 5 days and he plans on putting them in the refrigerator as soon as he gets back (now that he knows better) and plans on eating the two jars pretty quickly. Any opinions on how much of a risk it is to eat those suckers?
