My pita didn't puff

I made pita breads for the first time, following a recipe I found on line. They did not puff up. I used King Arthur organic artisan white flour, which always makes a great bread for me. These taste fine, but I wanted a traditional pocket. I formed 2-inch balls, then rolled them out into 4-inch circles, let them rest, and they baked up into 5-inch circles, but no pocket. The oven was at 425, and they baked for 8-10 minutes. Is there a trick?
