Grape Jelly Much Too Sweet!

I don't suppose there is anything to do about the fact that the jelly is really sweet. I made it last year and didn't have any issues. Don't know if the grapes were sweeter and with all that sugar added, much too sweet! I was reluctant to make the jelly without using pectin. Should have gone with the traditional receipe where it is cooked longer with less sugar.

Also, it is hard to find Concord grapes around here so to make another batch now, I have to go searching for grapes.

If it is a 'must' have thing then you can always make it with commercially canned Concord grape juice. Usually available in both sweetened and unsweetened varieties.

If you can find concords (I have to settle for Thomcords), I recommend Linda Ziedrich's concord grape jam. No pectin needed.

I never have used frozen fruits. I suspect the Orioles and / or Waxwings responsible for taking our blueberries, strawberries and raspberries before WE can get to them. They like our pears too. :-) For offering jelly we use a shallow dish, like the kind you would put under a flower pot so it doesn't spooge water everywhere. Its shallow and heavy enough that they don't flip the thing when they perch on the edge. So how do you give the Orioles nectar? I placed some in a shallow dish and the starlings had a bath in it. LOL! What a sticky mess they made! Then they needed to rinse off in the regular water birdbaths. Would they drink orange juice? C3D

He's using bottled, processed grape juice Daisy. Don't know if bigfoot's recipe is the same but here is mine. Sweet Pickled Squash I use zucchini because they are green ;) but any summer squash will work. This is a slight variation on the recipe in the BBB as it uses less onions and mustard seed instead of mustard powder and pre-ices the vegetables to retain more crispness. 2 lbs. summer squash cut into bite-sized cubes (avg.4 medium) 1 c sliced onions 1 1/4 c sugar 1 tsp. canning salt 1 tsp. mustard seed 1/2 tsp. turmeric 1/2 tsp. ginger 2 c water 1 c vinegar (I prefer cider) Soak squash cubes and onion slices in ice water for 2 hours to keep crisp and then drain. Combine remaining ingredients in sauce pot and bring to a boil. Add drained vegetables and boil for 10 minutes. Pack vegetables and juice into hot jars with 1/4 inch headspace. Remove air bubbles and process 10 mins. in BWB. I have also made dilled zuke chunks using the Mrs. Wages mixes and with the Dilly Beans recipe in the BBB. Dave

This is the device you would want. The very old Victorio had wooden pusher and had big wing nuts to hold the conical sieves onto the housing, which for grapes can get badly stained wood. The newer models are designed much better. They have been on eBay too, but always choose the type that offer twist on strainers held on with a single small thumb screw. They also have an O ring seal at the crank shaft. The grape spiral is an optional item, as its shorter auger to allow seeds to pass out the end without jamming. I also use the Roma for red raspberries and tomatoes with two sizes of strainer screens. Nothing better than seedless red raspberry jam, that can get all the juices extracted in no time.

Its oxidized. Its quite normal after a long storage for that that to happen. I have a couple like that here too. About all you can do next time is add some ascorbic acid to the jelly before its being canned. I do this with apricot preserves as they get quite brown too. Add the ascorbic at the last minute, before filling jars, as heat can weaken its affect. Most people don't notice much of a flavor difference, but you may. Its not spoiled, just goes the way of grapes, like you said- raisins..

Dave, I did see where commercial canned grape juice could be used. If I decide to go that route, I can do it later after all the other canning is completed. I have pears that are almost ready to be canned so that will be my next project and also the tomatoes are still ripening.

Next time I get my hands on Concord grapes, I may try Linda Ziedrich's grape receipe. I still have the overly sweet Concord Grape jelly to use. Need to see what I can do with it if I get complaints about it being too sweet.

Makes a good glaze for baking ham and other pork dishes, even grilled pork chops. You can also thin it down and use as pancake syrup or use it in baking. Wife loves to stuff/inject jellies into her muffins and other baked goods or use it mixed with whipped cream or cream cheese as the center filling for layer cakes. They are supposed to taste sweet. ;-)

Thanks Dave, those are good ideas. I did think the pancake syrup would work and also my daughter could use it when she makes muffins for the school lunches.
