Roasted Tomato Garlic Soup, another Q

There are a LOT of posts on Katie C's recipe and I tried to read them all, but unfortunately, I still didn't find the answers to my questions.

If you omit the oil from the recipe entirely:

Would it be safe to roast the pan of tomatoes and veggies as directed, then freeze the entire contents until a later date, then process per the directions?

IF the process of roasting, freezing, canning is OK, then will you also answer this: could I freeze multiple batches and then process them together to get a full canner load of 7 qt at a time?
