Safe2Can Tomato Sauce & Roasted Matter Soup?

I found two great recipes on Food Network, are they safe to can? Though neither recipe gives processing times, what would they be? Thanks in advance for your advice. MaryAnn

Roasted Tomato Soup

12 large romas tomatoes

1/2 cup olive oil

1/4 cup balsamic vinegar

12 large garlic cloves

salt and pepper

1 cup onions chopped

2 cups fresh basil leaves

2 cups water

PReheat oven to 500 degrees.

Prepare tomatoes; in a large bowl combine tomatoes,1/4 cup oil,vinegar,garlic,salt,pepper. Spread tomatoes out on a non-reactive baking sheet. Roast in oven until very dark in spots (35-40 minutes). Remove and allow to dry.

In a large sauce pan over medium heat, combie remaining 1/4 cup oil, onions and salt. Cook until onions are soft (8-10 minutes). Add basil with the onions for one minute.

Add the roasted tomatoes ans water to the pan. Bring to a simmer and cook for 10 minutes. Season with salt and pepper. Puree the tomato mixture in a blender. The mixture should be very smooth. You should have 8 cups. Prepare soup at this point and refrigerate it. When ready to serve, pour the soup into a medium saucepan and bring to a slow simmer.

Tomato Sauce

20 Roma tomatoes halved and seeded

1/4 cup olive oil

1/2 tsp. kosher salt

1 tsp. pepper

1 cup finely chopped onion

2 tsp. minced garlic

1 tablespoon fresh oregano

1 tablespoon fresh thyme

1 cup white wine

Preheat oven to 325 degrees.

In 2 ea. (13x9) pans place tomato halves cut side up. Sprinkle with oil,salt, pepper,onion, garlic and herbs. BAke for 2 hours. Check the tomatoes after 1 hours and turn down the heat if they are cooking too quickly. Turn Oven to 400 degrees and bake another 30 mintues. REmove from the oven and process tomatoes through a mill. Add white wine, bring to a boil, reduce eat to low and cook for 5 minutes.
