How big should you let you fruit trees grow?

Hey folks,

Just did some internet research on fruit trees. I plan to pant about 4 - apple, peach, apricot, plum.. next year or this fall. Came across some info on maintaining fruit trees at a small size, as in under 8' or no taller than what you can reach. People around here let some of their fruit trees grow quite large. I think the "small tree theory" asserts that smaller trees are easier to maintain in terms of pruning, thinning, pest control, etc... makes sense. I like the idea of controlling them. I also like the idea of a smaller, more compact tree as it does not take over a large space in the yard. I guess the only down side is a smaller crop, but how much can you eat?!

The Dave Wilson Nursery site even goes into grouping your fruit tree plantings in small spaces so it appears almost like a cluster.

What have others done? Do you find that keeping fruit trees to an economical size is better?
