Roasted corn on the cob and oven roasted pork chops topped with sliced Vidalia onions. Sliced garden tomatoes on the side. We went to the farm store and my husband went crazy buying Vidalia onions, they are not around very long and we love them so he bought a big bag of them. I made fresh homemade salsa yesterday with some of them and the tomatoes, very good stuff!

Had a late lunch and I'm leaving to play bridge at 6:00. Doubt I'll have any dinner…might finish the ribs from Sunday night dinner out.

Making husband what we call campfire breakfast. sausage onions potatoes and eggs all scrambled together topped with cheese. will use the leftovers to make breakfast burritos for a camping trip this weekend.

We host neighbors tomorrow night. That Hula Chicken thing in scooped out pineapples. Tonight, we go (me in my scrubs and he in his trashed shorts) out to eat at this BBQ place. Sweet Baby Janes

Thankfully the weather report was wrong. Yesterday was a killer with humidity and today was to be the same. Sun is shining with a beautiful breeze. It was said that the rains in TX and OK were bringing the humidity this far, as the land is so wet that it can't absorb the moisture out of the air as it passes. I hate humidity.

We grilled a pork tenderloin on Sunday. Today I made a tabbouleh out of quinoa (quinoa, tomatoes, cucumber, onion, carrot, red and orange peppers, chopped lovage, feta cheese) and a lemon juice, garlic and olive oil dressing. We had that with the rest of the pork.

Marinated quinoa salad with chopped zucchini, cukes, green onion, rat tail radish, chickpeas, sweet yellow pepper, grape tomatoes, minced jalapeno, fresh herbs, homemade vinaigrette. I'm forgetting something......goat cheese, locally grown.

I think we'll cut into a watermelon in a minute. I picked it up at the farmer's market today; "Yellow Baby" is the variety. I'm crossing my fingers that it's good.
