What's for Dinner ... Tuesday?
Comments (10)I had a great lunch after golf today. Grilled romaine hearts with salmon and a Caesar dressing drizzled lightly over all. The salmon was cooked to perfection. I'm often not pleased with salmon. Sometimes it tastes too strong but this was delicious. I made four qt.s of gazpacho today (I didn't play golf because it was too hot, but was committed to the luncheon) so I will probably have a little of that tonight. DH can help himself. For Father's Day I made all his favorites. Grilled flank steak, potato salad, cole slaw and three bean salad with garbanzo beans thrown in as an extra, and chocolate chip cookies. Lots of leftovers in the fridge....See MoreWhat's for Dinner ... Tuesday?
Comments (8)Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later....See MoreWhat's for Dinner ... Tuesday?
Comments (9)It's all about stuff from the garden these days. I've fixed a marinated salad of zucchini ribbons, rat tail radish, grape tomatoes, cukes, chard, quinoa, and goat cheese. (I don't have a goat in my garden and don't raise quinoa, lol.) Robert is getting ready to grill some sliced pork tenderloin, also marinated, to add to the meal. We had another big storm this afternoon, which cooled things off a lot even though it's steamy. If I wore glasses anymore, they would fog up when I go outside. It is "the air that you wear", that's for sure....See MoreWhat's for Dinner ... Tuesday?
Comments (8)We had an unplanned dinner guest. My daughter's first husband had taken their son swimming, and got back here just as dinner was coming out of the oven. The kitchen smelled so good--I could tell he noticed, so I invited him to stay. We all shared a pleasant meal--my daughter, her husband, her ex, and their son. I'm so happy for grandson's sake that everyone gets along....See Moreangelaid_gw
