What's for Dinner ... Tuesday?

Lots cooler here in Ohio today. I really enjoyed it. I just heated up leftovers from last night for my meal tonight. It's been a very busy day. I may not make it back to make comments tonight since I'm so tired. We'll see later.

What kind of foods did you have for your main meal today?

Cajun Steamer for me! Had a side of crawfish etouffee, and an appetizer of fried crawfish tails. Needless to say it is crawfish season.

Just a steak and asparagus for me. Long day in the car. Got up at 4:30 to make 3hour trip to med center, 3 hours in appointments and 3 hours home. My husband did all the driving and made the dinner. I only do this once a year now, thankfully.

I had a great lunch after golf today. Grilled romaine hearts with salmon and a Caesar dressing drizzled lightly over all. The salmon was cooked to perfection. I'm often not pleased with salmon. Sometimes it tastes too strong but this was delicious. I made four qt.s of gazpacho today (I didn't play golf because it was too hot, but was committed to the luncheon) so I will probably have a little of that tonight. DH can help himself. For Father's Day I made all his favorites. Grilled flank steak, potato salad, cole slaw and three bean salad with garbanzo beans thrown in as an extra, and chocolate chip cookies. Lots of leftovers in the fridge.

Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later.

My husband has said he will grill the nice bone in ribeye steaks we picked up and I am cooking fresh corn on the cob to go with it and sliced farm tomatoes. Beautiful day but oh so hot!! still over a hundred right now and will likely stay there for a while. I am headed to the atrium to turn on my sprinkler system I have set up in there. I can make it rain! LOL the plants and birds love it!

I have definitely made and eaten my share of them during our years living in Oklahoma. When I made mine I would dice up some of the sweet onions and mix it in with my ball of meat so there's onions in the meat as well as the giant pile on the top of the meat. I hit it with a splash of Worcestershire sauce while cooking. Man I can just smell it!

It has been rather cool and breezy here today also. Leftovers here also, hot dogs and potato salad.

I made a great roast beef with potatoes, onions, mushrooms, and I roasted carrots separately. It made a wonderful thick brown gravy to go over rice. It was wonderful. Had the neighbors over for dinner and a visit. I had picked up some home grown tomatoes at the farmers market and sliced up some of those too.

I just grabbed a couple of Gyros on the way home. Hectic work week and it's going to get worse before it gets better. *sigh*
