What's for Dinner ... Tuesday?

It is an absolutely gorgeous day here in Ohio. My kind of day.

I will have leftover salmon, a hard boiled egg, green beans and applesauce for my main meal. How about you?

Yesterday was a holiday for us Canadians. We cooked a bunch of veggies on the little indoor grill that we use on the balcony. We love this little guy!

We also grilled some chicken for fajitas that we had yesterday, and I used the asparagus and some of the peppers and onions in a frittata, which we had tonite.

There was a group buffet luncheon following golf today. I had salad, chicken parmesan and a rock fish ball. (snuck two tsp. of a friends cheese cake) I didn't get home until 4:00. I'm going to shower and get dressed for bridge tonight (6:15) so I might have a small bowl of cereal before I leave. DH is having leftover penne pasta with sausage from last night. It was really good so I'm jealous.

Raven: I thought I smelled Italian cooking coming up from the south. Sure enough that delicious smell was coming from your house. Kathsgrdn: That must have been one big meal. Aren't leftovers wonderful? Sue: Cook once, eat twice (or more). It's great not just for not having to cook again but financially. Casey: I like baked chicken. I've never tried roasting vegetables. Care to tell me how you do it? Jasdip: What a delicious looking photo! And you made roasted vegetables too. Angela: I can fully visualize one of those kabobs on a plate/platter in front of me. Georgysmom: I bet you're being too hard on yourself. I know you are a very good cook. Glenda: Another great sounding restaurant. Got a chuckle out of what your meal was called. So many things on the menu, I'd have a hard time choosing. Morz: Next time you're having this "easy" meal, call me up. I could eat it at least once a week. Shirley

Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later.

We had an unplanned dinner guest. My daughter's first husband had taken their son swimming, and got back here just as dinner was coming out of the oven. The kitchen smelled so good--I could tell he noticed, so I invited him to stay. We all shared a pleasant meal--my daughter, her husband, her ex, and their son. I'm so happy for grandson's sake that everyone gets along.

I have definitely made and eaten my share of them during our years living in Oklahoma. When I made mine I would dice up some of the sweet onions and mix it in with my ball of meat so there's onions in the meat as well as the giant pile on the top of the meat. I hit it with a splash of Worcestershire sauce while cooking. Man I can just smell it!

I am making some tuna salad for sandwiches or to eat in an actual salad which ever is preferred. I have two big bowls of beautiful home grown tomatoes so definitely those will be included in the meal. I could make a meal of just the tomatoes. I made a wonderful blt for early lunch today. Hard to beat a good blt! I always cook my bacon in the oven, so easy and simple and delish.

had bought a premade "Chinese" salad at sam's, so made panko breaded chicken to top it...it was just ok...would I buy it again? probably not..will go back to my Caesar salad mix...now that makes a great combo...

Glenda: Your food all sounds excellent .. something I'd enjoy.
Georgysmom: I wouldn't mind going through that buffet line. And I'm jealous of your husband's meal too.
Raven: I'm glad I don't have to choose between your meals. I'd take my tuna salad in a salad. I like my bacon oven cooked too.
Susan: We just have to take the chance that we would like a new product, don't we? I do it at least once a month. Sometimes it's a winner.....
Jasdip: I want to climb through the computer screen and grab a plateful of those goodies.
Phyllis: It's fun raiding the freezer, isn't it? I'll bet you have a lot of good choices in there.

We went to a local restaurant for dinner with a friend who is moving out of town tomorrow. The restaurant prides itself on its extensive beer selection, with 20-some different beers on tap, and something like 346 different bottled beers. We were waiting awhile for the friend to arrive so I had a cheese plate appetizer with a bourbon barrel stout, and then had a tilapia fillet topped with shrimp and crab, with garlic mashed potatoes and steamed asparagus.
