I am making spaghetti with meat sauce and a loaf of French garlic bread

We went to Olive Garden. Even after splitting a meal, there are leftovers.

I think I will have some of the leftover lasagna and green beans for my meal this evening.

Baked chicken breast and roasted veggies (asparagus, mushrooms, baby potatoes, turnip, onion and red pepper).

I made some burgers yesterday, and today hubby grilled them. We used the homemade buns that I made on the weekend. Alongside we had roasted veggies (eggplant, onions, peppers, leek, asparagus, etc). I also put a potato in the microwave.

Bacon wrapped chicken kabobs, with pineapple, mushrooms, onions, red peppers, and yellow peppers.

Shrimp fried rice. It was good, but not as good as usual. I guess my heart wasn't really in it.

Easy dinner tonight. I'm still working outside and just came in to check emails. Hot beef sandwiches....roast beef (last nights pot roast leftovers) with gravy, potatoes, carrots over toast. Tossed green salad and yogurt with some blueberries that I've had for a couple of days.

Raven: I thought I smelled Italian cooking coming up from the south. Sure enough that delicious smell was coming from your house.
Kathsgrdn: That must have been one big meal. Aren't leftovers wonderful?
Sue: Cook once, eat twice (or more). It's great not just for not having to cook again but financially.
Casey: I like baked chicken. I've never tried roasting vegetables. Care to tell me how you do it?
Jasdip: What a delicious looking photo! And you made roasted vegetables too.
Angela: I can fully visualize one of those kabobs on a plate/platter in front of me.
Georgysmom: I bet you're being too hard on yourself. I know you are a very good cook.
Glenda: Another great sounding restaurant. Got a chuckle out of what your meal was called. So many things on the menu, I'd have a hard time choosing.
Morz: Next time you're having this "easy" meal, call me up. I could eat it at least once a week.

Gadgets, how I roast veggies:

Cut up the veggies you like, although I suspect some types will not work as well. I usually use onion, bell pepper, whole mushrooms, baby potatoes (cut in half), turnip cut in cubes, asparagus & cauliflower. I find broccoli and carrots don't cook the same times (broccoli burns and carrots are too hard).

Cut up all the veggies and put in a bowl with a tablespoon of olive oil. Mix (I just put the cover on the bowl and give it a good shake). Then put on a cookie sheet lined with parchment paper. Sprinkle with salt if you like and bake in the oven for about 20-25 minutes.

I made one of our all-time favorites.....cheese stuffed squash blossoms, battered and deep fried. OMG, so good dipped in my marinara sauce. Also steamed julienned zucchini to serve with spicy meatballs and more of that marinara.

Oh, I forget to mention that the squash blossoms and zucchini were out of my garden. YAY, it's that time of year again.

Casey: I've copied/pasted your notes and am going to try them soon. One thing I'll add for sure is bell peppers.
