crawfish etouffee

Another gorgeous day today. We had some jambalaya that I had in the freezer.

Oven roasted red potatoes, bbq country style ribs, sliced cukes with pomegranate vinegrette

Spicy Perch, Cheesy Potatoes & A Caesar Salad.

I've been marinating some thick chops for grilling later on. I'll make a salad with mixed spring greens, plus my own baby greens, scallions, apple slices, blueberries, cukes, carrots, and cold, cooked quinoa.

Another, I really don't know night. I swear, I leave DH in charge of deciding what the meat will be, I come home to hamburger thawing on the counter. LOL And right now, he is out buying bulls, so I don't even know when he is getting home, so I can plan something he might like with that burger.

Just thinking about dinner and checking here for ideas.

Years ago I had shrimp etouffee at a restaurant and simply loved it. Thereafter when I saw it on a menu I would order it, and each time it was almost nothing like the first one and often not even very similar from one restaurants version to another. Later at an outdoor music festival with food booths with food from around the world, one Cajun-themed booth had crayfish etouffee and once again I was drawn in. Their version was tasty (although still not much like the first restaurant's version), but the large pot they were simmering it in was evidently not warm enough, making it more of a bacterial incubator, resulting in the worst case of food poisoning I've ever had.

prairie, you ought to take what you want out of the freezer and stick it in the fridge overnight, lol. I'd get sort of tired of hamburger night after night. At least there are lots of possibilities.....with the burger, I mean.

We had Great Northern soup beans and cornbread for our supper.

I made an awesome dinner! I was skeptical as I've tried polenta a few times and didn't care for it, but it was amazing.

Creamy polenta topped with caramelized onions, sauteed mushrooms and kale topped with a poached egg.

Glad your polenta came out great, chi! I made it once and didn't care for it either -- did you use a different recipe that worked better for you?

I made a salad and a vegetarian chili w/ sweet potatoes, garlic, yellow and vidalia onions, celery, tomatoes, black beans, dark red kidney beans, and peppers. It was excellent!

I added some garlic herb cheese to it and I think that made all the difference. It was creamy and really good. Here's the recipe if anyone is interested.

Mexican Soup, from our freezer. I'm trying to rotate everything in the freezer with new garden and 1/2 beef I need to make room for.

Chicago Pizza Buffett. It was our granddaughter's 5th birthday. Loved spending the time with all the kids and grandkids..

Had a throwback meal last night: ramen noodles and egg rolls. It hit the spot! Haven't had either of these in years.

My husband does the same to me. I get in a rut and toss him a pad for some dinner ideas. In about 2 minutes, I get the pad back

Salisbury Steak

Every dagnibbit "idea" involves ground beef.
We're getting the freezer ready for our half cow, also, Kathy.

Last night, I tossed a Stouffer's Frozen Lasagna in the oven for him. Didn't feel like shopping or cooking. Hopefully getting my cooking mojo back now.

I got meatloaf, mashed potatoes and gravy from store in deli section they cooked up, good it was and vegetables and fruit for dessert.
