I had a great lunch after golf today. Grilled romaine hearts with salmon and a Caesar dressing drizzled lightly over all. The salmon was cooked to perfection. I'm often not pleased with salmon. Sometimes it tastes too strong but this was delicious. I made four qt.s of gazpacho today (I didn't play golf because it was too hot, but was committed to the luncheon) so I will probably have a little of that tonight. DH can help himself. For Father's Day I made all his favorites. Grilled flank steak, potato salad, cole slaw and three bean salad with garbanzo beans thrown in as an extra, and chocolate chip cookies. Lots of leftovers in the fridge.

Yesterday I made pan-seared pork tenderloin medallions with a mustard cream sauce, with mashed potatoes and steamed asparagus. It was so good I think I will make the same thing tonight.

Cheryl and Amber spent the better part of the day picking black raspberries for me. The berries got washed, bagged and frozen. Tomorrow there will be more again. Today was nice, not as humid, cooler and a breeze. Amber and I had for supper a breaded tenderloin sandwich, a small one, from Mr. Happy Burger. Alyssa had a cheese burger.

Tonight was delightful- a reheat! And it reheated nicely.

Puree cauliflower, braised mustard greens, spice-rubbed, grilled pork tenderloin with cherry mostarda.

Lemon pudding cakes for dessert-also made beforehand.

Mimi: A lot of pork meals today. I'd surely like at least a bite of yours and also a bite of that delicious sounding dessert.

It's cherry season here and that got me thinking of pork ;-)

Speaking of pork, the other day Lauren and I went to Abuelos mexican restaurant and I got pork wrapped in bacon, it was so good. I bought a pork roast and Lauren got some bacon, she is going to try and duplicate it. Today, I'm eating dinner by myself and heated an organic frozen dinner in the microwave: eggplant parmesan.

We all went out to a great seafood restaurant tonight and man it good and fresh. I had a seafood platter, it came with some seafood gumbo that was excellent. We enjoyed it very much.

I did make the same pork dish with the same sauce, but made fresh coleslaw, and baked beans side dish made with black beans.

For the sauce after searing the pork, reduce the heat to medium, and add 1 Tbsp butter and 2 tsp flour, stirring the butter into the melting butter. Next add 1 tsp spicy brown mustard and 1/4 cup of half and half. Stir until the sauce becomes bubbly and thickens. Add 1/4 cup medium dry Madeira. Stir and reduce heat to medium low, cover pan and simmer meat and sauce until the meat is cooked.
