What's for Dinner ... Tuesday?
Comments (5)Grilled some salmon on a cedar plank, always so good. Made a salad with greens and marinated veggies from the garden, a little rice pilaf. Awfully hot here today, even though the patio and back porch are shaded after about ten, you could feel the heat radiating from the concrete. Glad that the salmon didn't take very long!...See MoreWhat's for Dinner ... Tuesday?
Comments (8)Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later....See MoreWhat's for Dinner ... Tuesday?
Comments (6)My husband has said he will grill the nice bone in ribeye steaks we picked up and I am cooking fresh corn on the cob to go with it and sliced farm tomatoes. Beautiful day but oh so hot!! still over a hundred right now and will likely stay there for a while. I am headed to the atrium to turn on my sprinkler system I have set up in there. I can make it rain! LOL the plants and birds love it!...See MoreWhat's for Dinner ... Tuesday?
Comments (9)Leftovers here, too. I'm going to make chicken fajitas with the chicken from last night, plus grilled green, yellow sweet peppers, and onions, avocado, chopped lettuce and tomatoes and sour cream, all on a flour tortilla. I'll mix up a little fresh salsa, too, I guess. Raven, I hope that your power comes back on SOON!...See Moremarylmi
