Monkey Princess makes pretzels

The Monkey Princess decided that we needed to learn to make those yummy soft pretzels that she can get at the school cafeteria. Um.....yeah. Anyway, off we went to the King Arthur website and found a "quick and easy" recipe for pretzel bites.

It was pretty much quick and easy, stir the dough, knead it, let it rest in a bag for 30 minutes. Make ropes, cut into pieces, soak in soda water, then transfer to a baking sheet lined with parchment paper and bake.

Mixing worked well...

So did the kneading part, and the resting. We made it into ropes, soaked it in the soda water and put it onto the greased parchment and baked it. The lovely golden brown pretzels got brushed with butter in preparation for salt on half and cinnamon sugar on half.

OK, now take them off the parchment. Yeah, they'll come right off. Or not. Mostly not, any we got removed had paper stuck to the bottom. She finally just took a serrated knife, cut the pretzels leaving the stuck bottoms, and then rolled the pretzels in her toppings.

They were very good and we'd make them again, but the next time we'll just put them onto a well greased baking sheet so that we can use a spatula to scrape them off without the layer of paper.

awww.... that sucks when you go through all that work and it sticks or breaks or something else goes horribly wrong. Glad they were good! One of these days I'm going to experiment with making GF pretzels. If anyone else has tried that, I'd love to hear your 2-cents.

Yes, I'm sure we'll see more of her, although she's gone home now. She doesn't have internet access at home, so she can only post when she's here, at her Dad's shop or at school. Cathy, that would be great fun if she could meet Lily and Beau! Peppi, she's nearly as tall as I am, and is 10 years old now. She's learning "knife skills" and how to separate eggs right now, and has nearly perfected crepes. She listens carefully, and then "makes it better". Thank you all for your kind comments. She did love it, and specifically asked for whipped cream, which was really easy. I used WHIP IT to stabilize. Now I have to go back and look at the video and learn the right way. Jamming her through, even though we drilled a hole inside was tough. Yes, it is choc cake. I cut the bottom in half and put choc filling and the same with the top. Her younger brothers had fun sticking their fingers in the cake. lol And at least I justified buying the pan....I can say I used it!

Here is the recipe I used, Ellen. It came from Taste of Home and I used King Arthur Flour Baking Mix, not the flour, but the biscuit/baking kind of mix. Gluten Free Apple Pie Donuts Taste of Home 2 cups gluten-free biscuit/baking mix 3/4 cup sugar 1 package (1/4 ounce) quick-rise yeast 1-1/2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon apple pie spice 1/4 teaspoon ground cinnamon 1/8 teaspoon baking soda 1/2 cup warm water (110° to 115°) 6 tablespoons butter, melted 1/4 cup unsweetened applesauce, room temperature 1 tablespoon vanilla extract GLAZE: 1 cup apple cider or juice 1 tablespoon butter, softened 2/3 to 3/4 cup confectioners' sugar Directions 1. In a large bowl, mix the first eight ingredients. In another bowl, whisk the water, butter, applesauce and vanilla until blended. Add to the dry ingredients; stir until blended. Cover and let rest for 10 minutes. 2. Cut a small hole in the corner of a food-safe plastic bag; fill with batter. Pipe into a 6-cavity doughnut pan coated with cooking spray, filling cavities three-fourths full. 3. Bake at 325° for 11-14 minutes or until golden brown. Cool for 5 minutes before removing from pan to a wire rack. Repeat with remaining batter. 4. For glaze, in a small saucepan, bring apple cider to a boil; cook until liquid is reduced to 3 tablespoons. Transfer to a small bowl; stir in butter until melted. LOL, Ellen, I told her to call it "Monkey in the Kitchen", but she thinks not. (grin) Olychick, you could easily beat up all dozen eggs together, but she always does them one at a time. For some reason she gets bits of shell in the egg regularly and it's easier to fish them out of a bowl with one egg cracked in it, than out of a big bowl with a dozen eggs in it! gardengrlz, they are good. Since they are low in carbs, we make them into sandwiches with bagels or English Muffins. (grin) Gotta up that carb level, you know? Sally, it's just so much fun to cook with the kids, and they LOVE being on the Cooking Forum, they're always reminding me to take pictures of them doing something so they can "be on the forum". Annie

I eat pretzels frequently and especially like pumpernickel pretzels, but I've never made them - very impressed!
I would recommend using Silpat on the baking sheet - that's what I use when I make biscotti.

That is so great. To choose something to make and have a partner, (grandma) to help make that happen. AND have some bumps in the road with the parchment and still enjoy the outcome. An incredible learning experience.

-why did it stick? not sure but maybe the sugars?

Not had that problem very often. When i ordered my parchment from webstarant (sp), i did have difficulty deciding being so many to choose from. I have a box of a thousand...adore that they fit my 1/2 sheet pans flat. (no more rolls to tear off)

Sleevendog, I think she's decided that the dough was still a bit wet from the soaking, and so made the paper soggy, and when they hit the hot oven they stuck. I don't know, but I do think we would be better off just using a greased baking sheet. I told her that's why people try recipes first, so if something unexpected happens, you figure it out and fix it. Sometimes it takes more than once. She was fine with that, and happy to make more pretzels, and her brother enthusiastically agreed, as his job is eating them! We'll be trying gluten free soon, I think, since her mother is celiac and we're working on adapting favorite recipes.

Dcarch, who is that second girl, she does resemble the Princess (or perhaps the Princess resembles her).

Cathy, I think she's pretty amazing too, but she doesn't smile enough. She has one crooked front tooth and will need braces and she's starting to be self conscious about it. It's the age, I guess.

party-music, when we're baking for "home", we don't really care if the results are pretty as long as they taste good, so it was still fine. It's just an excuse to bake some more, but I like it better when they come out perfect for her. I'm usually more disappointed than she is, she just sets about figuring out why it happened and how to keep it from happening again.

Lars, pumpernickel pretzels sound really good, we'll have to try them too, thanks for the idea. It's way more fun baking with someone than baking by yourself, although somehow I always get the clean up duty. Hmmm.....

LOL, dcarch, I really don't like Martha S, my girls even bought me a plaque for the kitchen once that said "Martha Stewart doesn't live here". (grin) Still, I know that Martha was a model when she was younger and has managed to make at least a living wage, what with her illegal stock market activities and all, so I'll take it as the compliment it was meant to be.
