Snow Day with the Monkey Princess - Frittata version

The kids had a snow day last week, and with Amanda working midnights, she needed some sleep. When I stopped to check on them, Bud wanted to come to our house so he didn't have to be quiet, LOL. Makayla just wanted to "bake something", so to my kitchen we went.

Since Amanda doesn't get home until after the kids leave for school, and Dave isn't really a cook, Makayla tries to get breakfast for herself and her brother. Dad gives them Instant Breakfast, LOL. She keeps pancakes and crepes in the freezer, sometimes French toast, and she makes smoothies, but she wanted something else. Funny how I just happened to have TWELVE DOZEN eggs in the fridge. Yeah.....

I suggested making "muffin cup frittatas". She promptly got on Pinterest and showed me what she wanted to do. Wrap a slice of bacon around the edge of a muffin pan, pour in a beaten egg, add some cheese, bake. OK, let's give that a whirl.....

First we have to line the muffin pans with bacon. No one in the family likes limp bacon, they all prefer it more crisp, so we decided to cook the bacon a little first, then use it to line the pans.

OK, back to the eggs. Crack them into a dish and add just a tiny bit of milk, beat them up. Not too much milk or they won't fit in the pan, like I did with that first one...

Add some cheese....

Into a 350 oven for about 20 minutes and they come out nice and brown. I don't know why some were high and puffy and some collapsed...

They were all nice and moist in the middle, with bacon around the outside, and we had to sample one. Then my brother had to sample one. Then Elery had to sample one. The rest went into ziplock bags, 4 per bag, and into the freezer, so we can have them for breakfast before school. Grandma says they'd make a good sandwich on an English muffin too. I think they might need another slice of cheese too.

Now I'm going to make cupcakes, but that's another story.

Cathy, I just have to figure out how to make her a YouTube channel, LOL, and then she can have her own "show". The frittatas are easy though. First you get a couple dozen chickens.....(grin)

Mimi, she'd love to be on one of those shows, she's constantly challenging me. "If I gave you a basket with rabbit, cheese and broccoli rabe, what would you make". LOL

She's doing pretty well, though. Her next project is Beer Jam. Yup. I'll have to buy the beer, of course. There's a local one that supposedly tastes of coffee and vanilla. Add star anise, cinnamon sticks, some more spices I can't remember. Some sugar and reduce the mixture until it's thick and sticky, then can it. It's not really jam, of course, it's sauce for grilled meat, but she's figuring that it might just be the winner of the Grand Champion fair ribbon she's been chasing for the past couple of years.

Hi Saucy...I'm here. I ended up having a lovely Thanksgiving day after thinking it would be a lonesome day with just the 2 of us. I overheard our evangelist saying he and his wife wouldn't be going to Oklahoma,( where the rest of their family was going), because of a doctor's appointment the following day.I asked them if they would be with anyone else that day, and thay said no, so I invited them to come to our house. They didn't know for sure whether they could come, but I went ahead and started the preparations on Wednesday( baking pies and pumpkin bars). I told Nolon I didn't think they would come.But Wednesday night, after we both had gone to bed early, the phone rang and it was John asking what time I wanted them to come! I was so pleased. They arrived at the time I told him ( 1 PM ) as I was putting the final touches on the meal. As one of you said about your meal...it was a real nice dinner even tho I did the preparing of it.:-) Doris brought a pumpkin pie , whipped cream, green beans, and a few other things. After we ate, and ate, and ate..:-), we visited the rest of the afternoon. It was a wonderful time ! Our former DIL decided that she wanted the girls this Thanksgiving, and Tim could have them at Christmas. She has decided they will alternate the years for the 2 holiday get-to-gethers ! (I am wondering how long she thinks Nolon and I will be around???) Since we live so far from them, and the latter part of Dec. can be very treacherous for driving here...it will remain to be seen if they make it this year. Thanksgiving has been our time with them ever since the first one was born, and she knows my stand on Christmas....just another case of her showing her true colors. Thank goodness Tim plans on bringing them this Friday for the weekend. I won't fix another Thanksgiving dinner, but that's okay. I have been reading, and enjoying, all of the posts. I am happy for all the good news, and sad with you that have sad news. Woody, I want you to know that the B 12 shots have very definitely helped. I took one a week for 4 weeks, and will begin one a month this coming tuesday. I presume they will continue the rest of my life.... I took Nolon for a checkup with a differant Doc last Monday. His regular doctor has gone into some sort of rehab, and will not be back until spring. I am thinking he ( Nolon) will be getting more appropriate treatment now. With the new meds that this doc gave him, he has already cut down on the use of the nebulizer. I don't plan on his returning to the 'old' doctor. It is wintry here. We have had a couple of skifts of snow, and had some ice on things this morning. The roads were not icy, so we didn't miss AM services. We did stay home this evening. The weather was too iffy, and it was very foggy. I am sending more hugs to Chelone... Marian

Man don't you hate the Post Office!! I do not know if you want to waste your efforts Amy as I have never found them to be sympathetic and the aggravation makes it worse. How could they ruin Lindt chocolate, there ought to be a law against that!! I have had a distaste for them but now it is real hatred! Was there anything salvageable? Hope things get better for you Susan, both healthwise and life circumstances. You know they are probably connected but that doesn't make you feel better. RR, I love my life too. It's busy and crazy and full and sometimes I'm tired, but I love it all. Even that snow out the kitchen window. Tell Maggie to eat an extra cookie for me, but don't tell her that I let Makayla have COFFEE in that Christmas mug by her elbow. Well, about a cup of milk with lots of sugar and a little bit of coffee, but still, it was coffee, and so very "grown up". Bud just wanted milk with his cookies, he's such a brother! Those cookies were SUPPOSED to be checkerboards, LOL, but they were a little.....um......misshapen. (grin) Cathy, we let Makayla pass out presents at the family Christmas party too, she even got to wear my elf hat that plays "We are Santa's Elves". The kids got $50 worth of fun out of that $5 hat! Pat, I like peanut butter on Ritz crackers, I'm not so sure about adding chocolate, I'll have to try that. Thanks, John, I didn't even NOTICE the handle. (sigh) I was busy chasing Apprentice Monkeys. I'll have to remind her, especially with the AMs around. And the kitchen definitely did not stay tidy. We had things on the counter, brownie batter on the floor, hot grease spattered everywhere and the dogs busy cleaning up the spilled cheese. I just keep putting things in the dishwasher! Byrd, I have a waterbed, leftover from my "hippie" days a long, long time ago. My husband says when I grow up, I'll get a big girl bed, LOL. So, the Monkeys DO love to jump on the bed, although I only allow the small Apprentice Monkeys to do it. They've all jumped on the bed when they were small. (grin) Soon they'll all be too big, and it will be "no more Monkeys, jumping on the bed". Ellen, we DID have macaroni and cheese and bacon first... Chase, The Princess is now about 6 inches taller than I am. Ooof. It just doesn't seem possible, and The Tasting Monkey is as tall as I am. The Princess will be 13 on her birthday, a teenager. Double "ooof". Mitch, they are growing up way too fast. The Princess needs a formal dress this year for the big dance. It's kind of depressing, although the Apprentice Monkeys will still sit on my lap and The Princess will still use elephant ears in place of eyes. :-) They all love to cook, so I'm happy. I don't know if they'll always love to cook, but right now, they want to be in the kitchen with me. Annie

You go, Makayla! Love to see you in the kitchen and the results of your talents. I'm really going to make up some of these frittatas, but not quite as many as you made. They just look so good and a perfect start for the day.

AnnT, I think she'd love to make breakfast for Moe, instead of her brother, who gives her a bad time about her cooking. She's really branching out into real food now, instead of just snack things, that makes me happy.

Madonna, they are really good right out of the oven, but even warmed in the microwave and sandwiched between English Muffin halves, it makes a good and quick healthy breakfast, with enough protein to keep them until lunch, which is 5 hours after they have breakfast.

Shambo, I even put some in my freezer, sometimes I just want something fast and that can be eaten out of hand.

Right now we're getting sleet, freezing rain, thunder, lightning, 30 MPH winds, and some snow. I think there will be no school tomorrow, in which case we might just take on another cooking project!

You're a fabulous grandma, teacher and she's a chip off the old block! My boys are interested, but she really has a talent! You're passing down all that kitchen love that your grandmother endowed you with. I can't wait for the Monkey Princess' YouTube channel!

Great job Makayla! Annie, these are great aren't they? I've been making them pretty regularly and are great for quick breakfasts. No (or very little) carbs!

They look great! I have a question for the chef(s). When making in bulk like this for the freezer or a large gathering, is there a reason to do each egg separately? I'm thinking I'd mix up a dozen eggs and the milk and then pour or ladle into the cups, but maybe I'm missing something? I'm definitely going to try them and I love the idea of the bacon belts.

LOL, Ellen, I told her to call it "Monkey in the Kitchen", but she thinks not. (grin)

Olychick, you could easily beat up all dozen eggs together, but she always does them one at a time. For some reason she gets bits of shell in the egg regularly and it's easier to fish them out of a bowl with one egg cracked in it, than out of a big bowl with a dozen eggs in it!

gardengrlz, they are good. Since they are low in carbs, we make them into sandwiches with bagels or English Muffins. (grin) Gotta up that carb level, you know?

Sally, it's just so much fun to cook with the kids, and they LOVE being on the Cooking Forum, they're always reminding me to take pictures of them doing something so they can "be on the forum".

Pam, she certainly has grown, she's taller than I am, wearing bigger shoes, shopping in the Junior department for clothes. (sigh) She IS gorgeous, as well as smart and kind.

Annie, tell Mikayla that she has inspired me to make these! I made some "egg muffins" last week with eggs, veggies and ham, but I didn't like the fact that the outsides seemed overcooked. I think the bacon may be the answer! Thanks Mikayla! You are a rock star!

Pam, she is far more Princess than Monkey now. I miss the Monkey part a little bit, but I have Madi, she can carry on the tradition, she always wants to be "Just like Kayda".

Linda, just don't cook the bacon too well done at first, or you can't wrap it around the inside of the muffin cups. I think making a "crust" out of thinly sliced ham or Canadian bacon would work too, we may have to try that next.

I'll be sure to show this to Makayla, so she can tell me "Yes, I'm awesome". I always respond that she's modest too, LOL.
