Snow days and cookies and hummus

We've had a lot of snow days this year. Today was one of them, and so The Princess and Bud came here for the day. The Princess wanted to bake cookies. Rainbow sprinkle cookies. Hmmmm.

They seemed a lot like chocolate chip cookies with a half cup of sprinkles in them. We used Christmas sprinkles because that's what we had, along with mini chips.

Taste testing:

Not to be outdone, her brother decided we needed to make hummus. His favorite, red pepper hummus, and he wanted some to take to his choir teacher too because she "LOVES hummus" and apparently has it for lunch regularly. So, hummus it is. He also wanted to use the "new" VitaMix, so we did.

Looks good, tastes good, we made a lot so his choir teacher could have some:

Cleaning the VitaMix is a pain, though, and no matter how I tried, I couldn't get it all out. It's a blender, after all, and the grooves in the blender container seem to be oddly tapered so a spatula doesn't fit well.

We did the fast and easy "cheater" method with canned beans, since we hadn't planned for a snow day hummus fest. I like the nice warm Milk Street version with freshly cooked garbanzos, but this was still pretty good. Nearly as good as cookies. (ahem)

Gotta love those snow days, although somehow they always seem to involve feeding someone!

I like the sprinkles in the cookies. I've only had one snow/ice day that I can remember, which was in Austin, but I had several hurricane/flood days when I lived in Houston. Ice is particularly dangerous in central Texas, as people do not know how to drive on it, but most people there won't go outside when there is ice, and so it is less of a problem, but it does close pretty much everything down. There was a major drought in Texas when I was growing up, which may have been why snow was so rare. I think it happened more often after I left.

I hate cleaning blenders! But recently I got a blender spatula, which is thin and flexible which helps get the narrow part of the blender clean.

Anyway, the cookies look amazing!! I have never tried cookies with sprinkles in them. Maybe I should!

I love hummus! It's by far my favorite dip. Even better than guacamole. And if it's done right, it's amazing. I bet Bud's choir teacher love it.

Oh, Ms. Luna, I'm so glad I am not the only one to talk to their car. I have named mine Miss Margaret, but call her Miss Maggie when she's in a spunky mood (in short galloping down the road rather than ambling and yes, I pat mine on the dash board when we make it through a tough spot or keep encouraging her with "You can make it, come on girl." I've always said that machines truly have minds of their own with a little mischief thrown in for good measure. Glad you made it home safe and sound. Please give "Bess" an ATTA GIRL for me. Kirk, hope you guys are beginning to thaw out up in the northwest. Loved the plate flowers on the other posting. GD, we love Aidell's sausages! I usually get the chicken and apple, but recently found spicy mango with jalapeno at Target. Very good! Allison, here's how I make gumbo. Amounts are approximate. I buy bottled roux. For me it's just easier than stirring for 20 minutes. When I made gumbo last week I baked the thighs (brushed with a little olive oil, S&P) instead of frying. I'll be doing that from here on. Much less mess! The andouille I buy has enough seasoning in it that I don't bother with anything else. YMMV Chicken and Andouille Gumbo 6 boneless thighs Flour Salt, pepper, and cayenneÃ¢ÂÂ¨ Vegetable oil for frying 1 cup chopped onionsÃ¢ÂÂ¨ 1 cup chopped green bell peppers Ã¢ÂÂ¨1 cup chopped celery 4 - 5 heaping tablespoons of dark roux about 8 cups chicken stock, heated 1/2 - 2/3 pound andouille, cut into 1/4-inch slices Ã¢ÂÂ¨3 teaspoons minced garlic Hot cooked rice green onions, sliced Remove excess fat from the chicken pieces. Combine flour, salt, pepper, and cayenne in paper bag. Toss in thighs and shake to coat. Ã¢ÂÂ¨Ã¢ÂÂ¨In a large cast iron skillet heat about 1/2 inch of oil until very hot. Fry the chicken pieces until crust is brown on both sides, about 6-8 minutes per side; drain on paper towels. Let oil cool, then remove from skillet, leaving as many of the browned particles in the pan as possible. In a medium-size bowl combine the onions, bell peppers and celery. Place the stock in a 6-quart stockpot or large Dutch oven and let simmer while you cook the veggies. Add roux to skillet over low heat and stir while it melts down. Then add veggies and cook till soft, stirring constantly. Takes about 10 minutes or so. Bring stock to a slow boil, then add the roux mixture by spoonfuls, stirring until dissolved between additions. Add the garlic and sausage and let simmer for 40 minutes. While gumbo is simmering remove meat from chicken in bite size pieces. Last 5 minutes add chicken. Serve over rice and top with green onions. jasdip - that was my plan. Except when I took the dog out we slid all the way down the laneway - and I am someone who is vigilant with the pet friendly salt alternative. So we didn't go - and of course I had to salt the sidewalk and the laneway and steps so that we wouldn't break our necks (or the mailman who delivered nothing but junk mail wouldn't) - and now the rain has washed it all away. It was the mushy stuff so I shovelled it out first. I am not surprised this is happening. Seems to happen every holiday when people are planning to fly/drive somewhere. And of course our dog had to see a squirrel and we were off....

Here's the recipe for Mrs. Barden's Bourbon Balls. It's probably the easiest cookie to make because it's a no-bake recipe. Every year I look forward to making these for a few reasons ~ they're DH's favorite's, they're really attractive in a cookie plate, there are only a few ingredients and they don't have to be baked, which saves me mucho time when I'm up to my eyeballs in cookies baking in the oven. I use a cookie scoop to shape them and for uniformity. I do them "in between" my other cookies when the oven's full and I need a breather. Make sure you mellow them for at least 48 hours before you eat them ;o) Mrs. BardenÂs Bourbon Balls Ingredients: 1 cup fine vanilla wafer crumbs 1 cup finely chopped pecans 1 cup confectioners' sugar (plus more for rolling) 2 tablespoons unsweetened cocoa powder 1/4 cup bourbon 1 tablespoons plus 1 1/2 teaspoons light corn syrup Preparation: Combine 1 cup crushed vanilla wafer crumbs, 1 cup chopped pecans, 1 cup confectioners' sugar, and 2 tbs. cocoa in a food processor. Pulse until fine. In a separate bowl, blend the bourbon and corn syrup. Pour the bourbon mixture into the dry mixture; mix until the dough pulls away from the sides of the food processor. Cover and chill for at least a few hours. Sift about 1/2 to 1 cup of confectioners' sugar on a cookie sheet. Shape small bits of the dough into balls and roll them in the confectioners'. Store in refrigerator in tightly covered containers. Make these a few days in advance for best flavor, and roll in confectioners' sugar again before serving, if desired. These can also be frozen for longer storage. Makes about 3 dozen

Snow days are always better at Grandma's house! LOL It's very nice of Bud to make a present for his choir teacher. Fwiw, I've heard that the Vitamix makes a terrible racket. I'm noise sensitive and would absolutely hate that and the fact that it's so difficult to clean. Makayla's cookies look like something that everyone would like!

Ellen, I have to tell you, the noise from that VitaMix is like unreal. Bud plugged his ears, I just winced. Dcarch sggested putting a 5 gallon bucket over top of it and plllog says she wears earplugs. I can certainly see why.

Makayla's cookies were much like my chocolate chip cookie recipe, with one cup of mini chips and half a cup of sprinkles. They were chewy and soft in the middle, crunchy on the outside, just like a good chocolate chip cookie should be.

Lars, we did use those long sprinkles that aren't so hard, I didn't think I'd like the crunchy little ones very well. They added more color than flavor or sweetness, but it did make them prettier.

Ice is treacherous, so no matter where you are ice can bring things to a stand still. We can power through snow, but ice keeps you home.

Choir is the only class Bud actually likes, other than science, so his teacher will be the only one that ever gets his homemade hummus, I think.

Annie, wash the blender by combining warm water and a few drops of a good grease cutting dish soap. Rinse. Voila.

sheilajoyce, I did that, it's what the instructions on line said. I used Dawn dish soap, and it didn't work, it left a layer of hummus down under the blades. I eventually reached down with a cloth and was very careful not to cut my fingers on the blade. The real issue, though, was trying to get the hummus out of the thing without wasting a lot of it. I'm going back to the food processor for hummus, it's so much easier to get it out of the FP. I probably wouldn't have tried a blender for hummus anyway, except Bud is a "machine" kind of guy and just wanted to use that in the worst way, since he'd not used it yet.
