Wow! dcarch, that was so very interesting. Was the knife you used to core the tomato a modification of another knife? I don't believe I've ever seen one shaped quite like that.

Great thoughts! Loved the tomato cradle and the carrot cradle. I wouldn't fiddle around with taking the tomato core out pre-cutting, I'd cut it out using a "v" cut once the tomato was halved or if quartered, with a single cut across the core.
As to slicing, as I watched you cut with the knife in that cool cradle on the side of the board, it occurred to me that a mandoline might be the go for one handed slicing.
I think it's lovely that you are putting some thought into this.

Clive could easily make her a board and cutting block similar to the one you made. I'll show this to her at Christmas and see what she thinks.

When she was home her Dad was her sous chef , now that she is away from home she is finding a few new challenges and cooking is one of them.

Cutting food on her plate is another. When she first went to university she only chose things in the caf that were already bite sized or didn't need cutting. However , she has met some new friends she is very comfortable with and they help her out if required.......one named Daniel seems a particularly "good" friend ! LOL

I know she will be very touched that you put so much effort into thinking about this and working up those models.

Sharon, many many years ago, I met a man who had one hand and a prosthetic hand on the other arm. He used a scalpel to cut his meat. He carried it with him whenever he went out to dinner (for all I know, he carried it with him all the time but that was in the pre-metal-detectors-everywhere days). He said it was extra sharp and he didn't have to use much pressure to cut up his food. Perhaps that would be helpful for Sara when she goes out to dinner.

bbstx, that is a knife I made, very useful for many fine cutting, better than a paring knife.

For cutting food, I find a mandoline difficult to use even with two hands. If you cut yourself on a mandoline, how do you bandage yourself with only one hand?

Chase, "Cutting food on her plate is another---- ". I think it is very easy to use a pair of scissors. Either that or she will have to eat only Chinese food. You never need a knife eating Chinese food. :-)

There are so many ways you can deal with tasks in the kitchen with the use of one hand.

And by the way, I don't think Sara needs any glam pictures. She is a very pretty lady.

An idea just came to me as I was writing:

It is very difficult to cut hard food like butternut squash even with two hands. I need to try out an idea that just occurred to me; How to cut a butternut squash, with a regular knife, using only one hand.

May be this weekend. :-)

If you use the food guard on the mandoline, you don't cut yourself.

I love kabocha squash, and many of you do. And many of you will also agree on how difficult it is to cut a kabocha squash, even with two hands.

So if you have the use of only one hand, how can you enjoy a kabocha squash?

So, the video is a way I came up with which may work for cutting open a kabocha or any tough squashes such as butter nut, using one hand.

Thank you for making me smile. I had polio as a child 70+ years ago. I grew up sort of one-legged, not one handed. I love your pragmatic, not-at-all-condescending suggestions for coping with physical limitations.
